Barbecued this USDA Prime brisket yesterday for my daughter's 8th birthday. Was absolutely delicious! . My "Beef" seasoning is perfect for brisket. It has a very central Texas style to it, simple but so much flavor. . Cooked it on my @langbbqsmokers hot and fast at 300° - 325°F for 7.5 hours, pulled at 207°F(probe tender) and let it rest for almost 2 hours. Here is one of the shoulders of the pig that @kamp_essentials and I butchered. . . I've been enjoying hot and fast #bbq. Got this done in just over 5 hrs. Seasoned with my "Original" seasoning. Used mostly cherry wood, with a little oak, I kept the @langbbqsmokers around 325°F. Never wrapped and got a great bark. #Keto cracker with leftover brisket and a pickle. This is a great snack to make with left over brisket. . . Keto cracker 2 cups shredded mozzarella 1 cup almond flour 1 tsp salt 1 tsp garlic 1/2 tsp freshly cracked pepper . . Melt mozzarella cheese in the microwave, about 1.5 minutes. . While cheese is still hot mix in all dry ingredients. If needed put back in microwave for a few seconds to soften dough. . Spread dough in between parchment paper and roll it flat, about 1/8 inch thick. . Cut dough into desired sizes. (Or leave whole and can be used as a keto pizza crust.) . Bake dough on a baking sheet in a 350°F preheated oven. Bake until they reached desired crispness. About 15 minutes. . . BBQ, to me, means way more than just eating incredible meat, its about community. Hanging out with friends, or giving bbq to the random people who walk by. The time spent bbqing is always worth it. . . Hot and fast brisket. Seasoned with my "Beef" seasoning the night before. Went on the @langbbqsmokers at 4:45 am. Maintained a temp between 275°-300°F. Never wrapped, pulled it at 10:45am when it reached and internal temperature of 209°F, and it was probe tender. It has much more to do with probe tenderness than internal temp, and it was tender. Covered and let rest for 2 hours.
