se le pone un poco de agua a la pasta al guisado, luego se le agrega el atún y prueba se dsal. se agregan 2-3 C. de yogurt. se le agrega el elote, zanahoria y chicharo
se ponen las papitas a la mitad o en cuatro con cascara. ya pre-cocidas. primero se pone la cebolla y se agregan las papas, los ejotes, sal y romero, se tapa, y se mueve constantemente.
1/4 cebolla (un pedacito) o una cebollita cambray picada
2 tomates huajes picados
aceite
sal de grano
2 hojas medianitas de hierbabuena fresca
los nopales se cosen solo con agua y sal, ya cortados en tiras, y luego se escurren y se enguajan.
se dejan remojando las habas en la noche y en la mañana se les tira el agua y se ponen a coser con un poco de sal. si no se alcanzaron a remojar 8 horas, se pone a hervir el agua y ya que esta hirviendo le apagas y le pones las habas y las tapas. las dejas reposar 45 min. se tira el agua
en un sarten con un poco de aciete de oliva pones el ajo exprimido, la cebolla y el tomate picados a que se sancochen. ahi se agrega agua (1l) y se ponen las habas remojasdas y se deja tapado a fuego medio como por 1 hora y media a que se cosan las habas. se deja enfriar. se licua, lo cuelas y lo vuelves a vaciar en els arten. se le agrega el nopal y las 2 hojitas de hierbabuena y se deja hervir.
vino blanco
En una holla de aciete quirúrgico se pone un chorrito de aceite de oliva. se sella el salmon con sal y pimienta por los 2 lados. se baja el fuego y se tapa. como a los 20 minutos se le pone cebollita de cambray picada, perejil, aceitunas, y alcaparras y un chorrito de vino blanco (o agua). se tapa y se deja coser bien para que se integre.
1/4 de poro grande o 1/2 de una chica (en rodajas)
3 papas grandes peladas y cortadas en cuadritos
1 litro caldo de pollo
sal
nuez moscada
Se frie el poro con aceite de oliva y se le agrega la papa en cuadritos junto con un litro de caldo de pollo, se deja hervir
ya que esta cocida la papa y suavizado el poro, se deja enfriar un poco y se cuela. se vuelve a vaciar en el sarten y se prueba con sal y se espolvorea con nuez moscadaa
Crema de Papa y Zanahoria (Sopa que te hace sentir bien)
2 C mantequilla
2 cebollas de cambray picadas
2 zanahorias ralladas
2 papas peladas en cubos
3 t. de agua
1 c. de sal
1 C. perejil seco
1/2 cucharadita de tomillo seco
1 hoja laurel
2 t. leche
sal y pimienta al gusto
Derrite la mantequilla en una olla grande a fuego medio. Agregar la cebolla y sofrie de 5 a 10 min hasta que esten suaves. incorpora las zanahorias, papas y que se sofrien tantito. se agrega agua, sal, perejil, tomillo y laurel.
Reduce el fuego a bajo y cocina durante 30 min. moviendo de vez en cuando. retira la hoja de laurel
licua la sopa en partes y regresala a la olla. incorpora leche, mezcla bien, y sazona con sal y pimienta al gusto.
Garnish con crema, crutones, verduras en pronoise encima
En un sartén con un poco de aceite se ponen a acitronar la cebolla y el ajo. ya que se suavizaron se les agrega la zanahoria y el apio, ya que se suavicen se agrega la calabacita, luego los champiñones y por ultimo las acelgas. se le pone sal de grano y pimienta al gusto. que quede sequito o se le tira el juguito. se revuelve el huevo duro con la mezcla y se deja aparte.
para hacer la salsa de tomate se ponen los jitomates en una olla a cocer tapados y a fuego lento con un pedacito de cebolla y un diente de ajo. se le agrega un chorrito de aceite de oliva ya que esten cocidos se pelan los tomates y se licuan con un poquito de agua a que esten cocidos junto a la cebolla y el ajo. todo esto se licua y se pone en la misma ollita a que hierva. se le sazona con un poco de oregano deshidratado y sal de grano.
ya en un pyrex rectangular grande al que se le pone pam primero, se coloca la pasta de la lasaña a que cubra la superficie, luego se agrega una capa de verduras, luego otra de suficiente salsa de tomate y por ultimo se espolvorea primero el queso suave en mas cantidad y luego el gouda. se repiten las capas y al ultimo se acaba con queso. se mete al horno 180C tapado con aluminio a que se cosa la pasta
un trozo de como 2 cm de gengibre natural con cáscara
3C jugo maggi tapa azul pezclado con el jugo de nomrlaes
2 naranjas grandes (no chiquitas)

Se pone el pollo, chcile morron, cebolla y gengibre en aciete de oliva a que se cosa como 20 min. luego se le agrega la verdura y la salsa a que hierva 20 min.
En un sarten, calentar el aciete y acitronar la cebolla con el epazote. Añadir el ajo, el morrón y cocer a fuego lento durante 3 min. Incorporar el tomate y el caldo de pollo, cuando la preparación rompa un hervor, retirar de fuego, licuar, colar y volver a cocinar 15 min.

3/4 cup dashi stock (homemade or made with instant dashi granules)
2 tablespoons soy sauce
2 tablespoons mirin
Instructions
First, prepare the dipping sauce by combining dashi stock, soy sauce, and mirin. We used instant dashi, but if you want to make it yourself, we have detailed instructions in our Miso Soup recipe. At this point, you can also cook the rice you’ll serve with the tempura.
Next, prepare the vegetables, making sure everything is washed and trimmed. Nothing should be too wet ahead of frying, so if needed, pat the vegetables with a kitchen towel or let them sit at room temperature to dry off while you prep everything else.
Score the shrimp with a sharp knife so that they can lay flat (you can do this lightly if you don’t mind them retaining some of their curved shape). Refrigerate the shrimp until you’re ready to fry.
Next, make the batter. Stir together the ice water, cake flour, and egg yolks. No need to get rid of all the lumps—in fact, take care not to overmix it. Pop it in the refrigerator while you heat the frying oil.
In a small deep pot, heat enough oil to fill it about halfway, over medium-high heat. While that’s happening, set up a wire rack over a sheet pan or a platter lined with paper towels. When a drop of the batter sizzles vigorously but doesn’t brown too quickly, you’re ready to go.
To fry, swirl one piece of vegetable or shrimp in the batter (for the shrimp, hold it by the tail), and lower it gently into the batter. Fry everything in batches of 3-4 items for 45-90 seconds, turning each item 3-4 times. When the vegetables are lightly golden and the shrimp are lightly golden, orange, and floating, it’s ready to be transferred to the wire rack.
Adjust the heat as needed between batches as you add cold food to the oil. The oil should be hot enough that it doesn’t take too long to cook the tempura, but not so hot that the food immediately turns golden when it hits the oil.
To assemble the tempura donburi bowls, spoon a base of steamed rice into each bowl. Top with with vegetables and a few shrimp per bowl. Serve with the dipping sauce, grated daikon (optional), and perhaps a bowl of miso soup!
honey roasted carrots with whipped ricotta and chili butter
1-2 bunch carrots, tops trimmed, peeled, and cut down the middle
Extra virgin olive oil
Salt
Pepper
Honey
6 tablespoons unsalted butter
1 tsp red pepper flakes
1 tsp paprika
1 cup whole milk ricotta cheese
1 tablespoon maple syrup
Preheat oven to 400 degrees. Peel and cut carrots in half lengthwise. Place on a sheet pan and toss in olive oil, salt, pepper, and a drizzle of honey. Place in oven and roast until tender and slightly browned, about 25 minutes. While those are in the oven, combine ricotta, maple syrup, and pinch of salt to a food processor. Pulse until fully blended and set aside. Heat a saucepan over medium heat, add the butter and let melt. Add the red pepper flakes and paprika and lower the heat to medium-low. Simmer for about 1 minute and set aside. Spread the ricotta mixture on a serving dish and top with the roasted carrots. Drizzle the chili butter over the carrots and top with sea salt, and dried parsley and enjoy!:)
optional garnishes: finely chopped parsley and red pepper flakes
Instructions
Bring a large pot of salted water to a boil. Throw in the pasta and cook according to package directions. Reserve at least 1 cup of pasta water and then drain.
In a saucepan, add the olive oil over medium heat. Add the garlic and tomato paste and cook for about 4 to 5 minutes. The tomato paste will darken in color from a bright red to reddish brown. This process removes acidity from the tomato paste. Add vodka and let it cook for 1 minute
Add heavy cream and mix until incorporated. Simmer for about 2 to 3 minutes.
Add the red pepper flakes, dried basil, salt, and black pepper to taste. Mix again.
Add the grated parmesan, butter, and 1/2 a cup pasta water. Mix until the sauce is smooth and creamy. If you think it needs more pasta water, you can add but 1/2 a cup is perfect for me.
Toss in the cooked pasta and mix to coat evenly. Optional, top it off with more grated parm, chopped parsley, and chili flakes.
