Vitamins and minerals make you prettier, help with metabolism, and reduce side-effects of our disorder like being sluggish, tired, having low immunity, not being able to think, fragility and more.
So, with what calories you do eat, maximize them!
💫 Vitamin A - Aka retinol, anti-aging, supports vision, immune function, skin, and the lining of the eyes, lungs, and gut
💫 Vitamin C - Helps make collagen, supports skin and blood vessels, aids wound healing, acts as an antioxidant
💫 Vitamin E - Acts as an antioxidant that helps protect cells from damage. It also supports immune function
💫 Vitamin K - Important for bone health
💫 *Thiamin (B1) - Helps your body turn carbohydrates into energy and supports nerve function. In a severely malnourished person, thiamine deficiency can become especially important during refeeding (eating for the first time after starving) because carbohydrate intake increases the demand for thiamine; low thiamine can cause serious neurologic complications such as Wernicke encephalopathy and Korsakoff syndrome
💫 Riboflavin (B2) - Helps with energy production and supports skin, eyes, and normal cell function
💫 Niacin (B3) - Helps convert food into energy and supports the nervous system, skin, and digestion
💫 Pantothenic acid (B5) - Helps make and break down fats and supports production of hormones and energy metabolism
💫 Vitamin B6 - Helps with protein metabolism, brain function, neurotransmitter production, immune function, and red blood cell formation
💫 Folate (B9) - Needed for healthy cell turnover

I also tried to choose only recipes whose serving amount can be edited to 1, so as not to make too much and eat too much
❣️Cabbage Fried Rice (without egg, so vegan & no cholesterol) - 96 kcal
❣️Butternut Squash Soup (346% DV vitamin A! My favorite beauty vitamin, aka retinol!) - 81 kcal
❣️Oil-Free Chimichurri (adds so much flavor to anything, I like to put over plain-roasted portobello caps for +~25 kcal, also so good just to eat tiny bits at a time with a spoon until cravings pass) - 8 kcal
❣️Balsamic-Grilled Vegetables (must only use HALF the OIL) - 125 kcal
❣️Baked Ratatouille - 134 kcal
❣️Lime Cilantro Cauliflower Rice - 62 kcal
❣️Oil-Free Gazpacho (can't change from 2 servings, but just save some for tomorrow) - 111 kcal
❣️Oil-Free Frybread (can't change recipe from 8 servings, but so easy to just make 2 servings, just save one for later) - 110 kcal
❣️German Vinegar Cucumber Salad (can't change from 2 servings, ugh sorry) - 101 kcal
❣️Vegan Quiche Cups (probably going to be hard to make less than 6 because of ingredient amounts tbh) - 57 kcal per 1
❣️Simple Spaghetti Squash (be sure to use low-cal/sugar-free marinara) - 90 kcal
