It is now autumn in Germany and the weather is stormy and cold. The leaves are turning in various shades of red, brown and yellow and I am craving for a nice worm soup. My cousin found a great place in Mannheim, mostly hidden from the beaten path for most people. But we tried it out and ever since love this place. They make fresh, hand made noodles, an authentic, delicious and hearty broth along with tasty toppings. I had a really good noodle soup with a nice and slightly spicy beef broth. The noodles where springy and chewy, simply delicious. Takoyaki (たこ焼き) Almost anyone who enjoys Anime or Manga has sawn these little balls of joy and maybe wondered what they actually are. Well... Takoyaki (たこ焼き or 蛸焼) is a snack made of a wheat flour-based batter which is then fried in a special molded pan with small spherical impressions. It is typically filled with minced or diced octopus (tako), tempura scraps and green onion. They are then are brushed with takoyaki sauce (similar to Worcestershire sauce or Okonomiyaki sauce) and mayonnaise, and then sprinkled with green laver (aonori), pieces of pickled ginger, shavings of dried Bonito and sometimes finely chopped green onions. Salmon and Ramen leftover. The day before I made a little too much Ramendough, so I had to somehow use it. I also had some salmon in the fridge and a few veggies that I didn't want to store anymore so the easiest solution was to make some Ramensoup. The soup base is fairly simple made with Dashi, dried fish, soy sauce and chilli oil with Sichuan pepper corns. The toppings are sliced onions, diced shiitake, chopped napa cabbage and julienned daikon and carrots that I then quickly fried up and lightly seasoned with satay sauce. The salmon itself was first salted and left to rest for about an hour, then marinated in Sake and Mirin. Then I battered it lightly with flour and fried in a pan. All in all it took me only 20 minutes to prepare and cook. So it was fairly quick. Minus the time for salting and marinating the salmon. Oh and Sapporo Beer is really good. Since I have my own personal Wok Burner, I tried out a few dishes and experimented with different sauces, spices, cooking techniques and ingredients. I am starting to really get a hang of it and it turns out that my friends and family really love wok dishes. Quality means no compromise and that goes for preparation, cooking and ingredients. It does not mean you have to buy the most expensive cut off meat you can find, but you should rather eat less, for more value. I don't like eating meat that is clearly underwhelming and maybe full of antibiotics. I rather skip it then and just eat veggies and Tofu. Why waste your money and time on something that won't satisfy you? I know many people don't have the money to buy good cuts and neither do I. So I just skip a few days the meat and save up for something nice. It is time that we should be aware of the things that we eat. It may sound stupid, but I sometimes just choose to fast or only eat greens and other veggies instead of buying meat. Meat should be respected, since it comes from an animal that had to give up it's life for one's enjoyment. . . My colleagues and I had to work on a holiday. Since we are railroaders, the wheels had to keep going and we had the long shift. So we figured that we should make a feast for us and make the most of our holiday. One of my older colleagues is quite picky about food and isn't very fond about foreign cuisine and thinks that vegan food is disgusting. So I reckon I would have to do something foreign, vegan to teach him a lesson and without pork since I have muslim colleagues. So I had a plan, Chicken Teba, Karaage, Rice and a special spicy Kare (Japanese Curry). And guess what. My picky coworker dug right into the Kare, praising how good and meaty it was. The funny thing is that the Kare is completely vegan. Not even the Dashi contained fish. It was completely seaweed based an the meat or bacon was actually smoked and seasoned smoked tofu that I sliced thin and fried super crispy. 🤣 The so called Chicken Nuggets where spicy and garlicky Karaage and the Chicken Teba was so simple it wasn't even funny anymore. Wok is a quite simple but also demanding way to cook. It is basically a big round pan and a strong and roaring fire where you fry something up. The demanding part is the timing, technique, speed, coordination, preparation and multitasking. The ingredients have to be chopped and cut in the right size and Form else they might come out raw or even charred. Sometimes you have to stir rhythmically while adding ingredients and controlling the flame with your leg or feet and then add seasoning or sauce in a few seconds. It demands all your focus since it is a fast paced cooking. You have to know the cooking time of every ingredient and when to add different spices so no aroma gets lost. You need to understand the basics of heat control. You have to know when a violent and roaring fire is appropriate or a soft and whispering flame. It teaches you the basics of heat control and timing. Also you will learn to respect, but not fear the flame. I really believe that anybody who wants to improve their cooking skills should give the Wok a chance. . . Simplicity is King. Sometimes you just need to make a easy recipe spot on, using authentic and fresh ingredients and focusing on getting it on point. In this case I made shio sake with a nice thick sauce made by reducing Sake, Mirin, Caramelized Sugar and Soy sauce. The salmon itself just salted over and then washed with sake before shortly searing it in a blazing hot pan until the skin turns crispy. And then flip it over to cook it on both sides. Finish! Simply serve it with a bowl of rice and garnish it with some greens. I didn't post anything Sushi related for a while, so here ya go! Three very tasty interpretation of Nigiri. Making Nigiri isn't as straightforward as it may seem. Basically you just see a rice-ball of some sort with a piece of fish slapped on top of it. But if you ever tried a halfway decent Nigiri you will notice that it is not just a dense ball of rice. It is quite light and fluffy. The rice grain isn't smashed and has various airpockets trapped in it. It relies heavily on correct compression and pressure points. If you ever seen a Sushi Master making Sushi, you can watch him making gestures while compressing with allot of force without smashing the actual rice-ball. It takes allot of practice. And rice... Anyway.... My first Nigiri is topped with a lovely piece of lightly salted tuna which I then seared with a small torch for a nice grilled taste, effectively making a type of Mini Tataki. The second piece is a nicely smoked cut of sockeye salmon with a touch of ginger and chives. The last piece is a tasty fresh cut of Hamachi with slices of citrus shell and some sesame for a warm nutty flavor. All of the Nigiri pieces have my home made thick Unagi sauce with a special twist. Hey guys! Hope you had a good new year and happy holidays. I know I'm late. 😅 But anyway I got something special. Ozoni. The traditional japanese New Year's soup, but with a slight personal spin. It's quite simple. Basically it's a Dashi stock with a drizzle of mentsuyu and a pinch of salt. It represents the favorite Japanese ingredients of my family. We universally like carrots and salmon since you can make so many things with it. My brother loves Daikon, my mother likes mentsuyu for soba, I love shimeji and shiitake, the caviar should represent the dragon balls since it was my brother and my first anime and should represent our love for Manga and Anime. And the shreds of citrus represents my brothers fiance who is basically like a younger sister I never had and can fucking annoy the shit out of. I promise to make Ramen for one of my followers. @saturns_winter_funland I did not know what to actually do since I didn't really had anything Ramen inspiring their. But then I realized that a simplified version of the Tokyo Ramen Style with homemade Noodles and a simple but delicious broth will make some kickass after work dinner. The noodles are home and handmade. I made them in the traditional way with flour, water, salt and kansui that I made myself. The broth is quite simple. The base is just a well made Dashi. I then chopped garlic, onion and ginger, then tossed it in the pan with sesame oil, chilli oil, Black Bean Garlic Paste and soy sauce. I then added that to my Dashi and then lightly boiled it. Many of them originally came from Eastern Europe or from the Ex Soviet Block of Germany. So they are more familiar with foods and dishes from Russia, Poland, Ukraine and other former soviet countries. So what is Red, Russian and Delicious and fits perfectly with Vodka? Borsch! (It's not a Typo. There is no "T" in the word Borsch*t* деби́л!) The famous red beet soup. The dish itself is fairly simple to make, it just takes time and good preparation. It's made of red beet (duh), potatoes, cabbage, onions, carrots, meat (beef since I have Muslim Co- workers) and garlic for good measures of delaying you finding the love of your life.
