riddle being one of only two characters to have their appearance changed in book 6 is definitely a very important thing.
the only other character was vil, who was aged an insane amount, and his response to that was a chance to exemplify his character growth. he'd taken rook's words to heart. beauty isn't only skin-deep, and even if it were, it is only your perception of yourself that truly matters. if you believe yourself to be beautiful, then you are beautiful.
then, there's riddle. he wasn't physically aged beyond his hair going white. why is that?

the white queen who, in the original story, is incredibly childish in contrast with the necessity of maturity incredibly early on in life in victorian england.
riddle who played a video game for the first time because one of his peers was nagging and teasing him. riddle who laughed with his friend after defeating the original overblot phantom because it was just cool.
riddle who broke down sobbing after his overblot because he just wanted to play with his friends a little longer.
the white queen who, in the 2010/16 movies, is a kind, selfless ruler and mentor in contrast to the embodiment-of-anger red queen.
riddle who used his own magic to charge their spear. riddle who risked his life just to buy the others a little more time.
riddle who's gone out of his way to figure out how to help his dormmates succeed, even when it meant learning how to use an entirely new-to-him platform, because he doesn't want them to fall behind or struggle.
riddle's white hair is also to exemplify his character growth. he isn't a raging tyrant anymore. he's learned to put his anger aside to be kind and patient and selfless.
on top of that, white symbolizes purity. pretty ironic for the first guy in the lineup to be consumed by their own negative emotions and overuse of dark/draining magic, right? but he's proven himself. he's not the same person who lost their head because they didn't have control anymore. he has grown, just as vil had.
