My partners and I went on a hell of a rabbit hole about this specific topic a year or so ago, it turns out every single conclusion about the environmental impace of rice is using data from exactly one study of Italian rice farmers from the 1980s. Without getting into it, the farmers in the study were using a a less efficient and less common method of harvesting rice which makes the data look worse, and every conclusion is extrapolated from that data. Also notably, if you look at the methane produced by the worlds rice production that feeds literally half the population of the planet versus say the American beef industry... the per person numbers suddenly snap into focus.

Glad that its a bowl of rice featuring chopsticks. Glad this isnt fueled by racism (or using it as bait) in the slightest (sarcasm).

For real though, you wanna know what contributes most to the numbers they have? TRANSPORTATION. So. Same as it ever was.

Sure, there are more efficient ways to farm rice, and a lot of them might be implementable, but 1. Who pays for that infrustructure (hint, defaults to farmers) and 2. Even if all the emissions from rice cultivation were eliminated, we wouldnt have tackled more than a fraction of the problem.
