Soup & Rice meal - Hakumei to Mikochi ep3
recipe time: bacon ramen
I’ve been living off of this stuff for the past few weeks so I thought I would share. It’s another no-measurement recipe. feel it in your soul.
Ingredients:
Bacon (two or three slices is a good amount)
Broth of some kind (I use homemade, any is fine)
Two eggs
Carrots
Corn
Onions
Garlic
Seaweed sheets
Noodles (I buy vermicelli, but instant ramen noodles or other noodles work great as well)
Method:
Julienne carrots and onions (thin strips)
Mash your garlic
Cut seaweed sheets into smaller portions as desired/needed
Fry your bacon
While bacon is frying, boil water and cook your eggs
To soft-boil eggs, put them in boiling water, lower to a simmer, and leave in for 5 minutes. Set aside in ice water to cool so you can peel them
note: you don’t want to cool the eggs completely! about a minute in ice water cools the shells enough to be handled, and doesn’t make the egg whites stick to the shell. longer does
Remove bacon and drain excess oil from pan
Fry corn, onion, garlic, and carrots in the bacon fat. Remove when slightly charred.
Cook your noodles, set aside.
Add your vegetable broth to the pan used for frying bacon and veggies. Bring to a boil
Dice up cooked bacon, peel your eggs, etc
Add everything to a bowl. Pour your broth in last
Eat!
You can add more vegetables, pork belly, anything really. I like this as a non-spicey ramen but adding some chili oil would make it really good. It seems like a lot to do but a lot of it happens at the same time, so it takes about half an hour to make. I also will eat it with spinach leaves and it’s really good!
