Zucchini, roasted red pepper, kalamata olives, green olives, parsley, and homemade dressing.
Spaghetti and homemade meatballs!
I used a recipe by Matty Matheson for the meatballs and substituted gf bread and gf panko breadcrumbs
Wowww. Fowl & Fodder in downtown Toledo, Ohio has fresh fried gf donuts and they are 10/10. Absolutely beyond.
Nappa cabbage tossed with lime + orange juice, olive oil, salt and pepper.
Topped with red pepper, chicken thighs, peanuts and cilantro.
Ordered these from Katz website and I'm very excited! I've had the creme cakes before but not the pretzels or cinnamon buns.
Spent a few days in Orlando (including a trip to Disney World). Didn't snap any Disney food photos, but I am happy to report that nearly every restaurant has at least 3-4 gluten free options. one place I had gf chicken tenders and another I had a very good pepperoni pizza. The smaller snack stands aren't as gluten free friendly but it's really not much of an inconvenience because food options are everywhere and bringing your own snacks is allowed.
This place was not in Disney; (but is in Orlando) it's called Sofrito's Latin and it has arepas and empanadas, both gf. I'm very fond of arepas but I haven't had them in several years because there's no places in my area that make them. The empanadas were so good! The filing was similar to ropa veija (shredded beef with veggies) and had a tasty dipping sauce.

I know there's a specific name for these kinds of desserts that have lots of layers and elements to them... I can't remember it. Regardless, they're my favorite! Delysees in Toronto has 4 of these treats gluten free. The one in the front was filled with cherries and chocolate mousse. Sooo good 😍

The crust came from fresh thyme and it's easily the best store bought crust I've ever had.
Unfortunately, I've been having an adverse reaction to dairy lately and this upset my stomach.
I've tried using lactose free milk when needed, and I've also tried using my similase supplements to help digest casein after meals but so far none of that has helped.
I know the way to fix this is to just avoid dairy, but it's been difficult. It's in e v e r y t h i n g and I do love cheese and such! I also don't know why it's something I've developed this late in life. Literally two months ago I was not having any issues with dairy. So weird.

Pregnancy changed my hair texture. My hair used to be stick straight; not any wave or curl to be found. There wasn't a noticeable difference when it was long but I could feel it. Definitely wasn't as flat as it used to be. Now that I've cut it short you can see the change. All those little pieces flipping out at the end, the pieces waving away from my face... That's all very different. I don't think my hair will change back because it's been over two years since I first became pregnant but who knows. Pregnancy is wild!
Today I was brave and tried my hand at making a homemade gluten free cake.
I feel confident in making cookies, brownies, biscuits, and breads... But cakes are a beast. They're either dry, hard, or gummy. Today, I think I finally achieved an edible gluten free cake! And I would say it's not just edible but pretty good.

I was hesitant with this recipe because despite the reviews, there were quite a few people in the comments who had suffered disasters. The cake didn't rise at all, but somehow it wasn't dense, or gummy. There's a large amount of baking powder in it, which you can kinda taste in the background but once you have the frosting there it's hardly noticeable. I will also say that between the cake and the frosting I used 10 egg whites lol. So overall, still a win.
I used King Arthur 1:1 gluten free flour for this and had good results. The recipe says you can use any gluten free blend, but I would avoid Cup 4 Cup for cake recipes. I have not had a single cake recipe with C4C turn out. They're great for cookies and pie crusts but I think there's way too much corn starch in their mix for cakes to succeed.

Listen, I love a good hot dog.
But gluten free hot dog buns suck. Even more than your typical sliced gf bread. But I snagged from Canyon Bakehouse sub buns and they're ✨really✨ good. I mean, really good*.
*by really good I mean in comparison to other gluten free items. They're no gluten bun that's for sure.
