Reina pepiada arepa (chicken and avocado sandwich)

Cornmeal griddlecakes, made with masarepa, or un-nixtamalized, pre-cooked cornmeal. A delightful, savory snack, often filled with queso, mantequilla, and other fillings!
Savory, hearty, and delicious. I enjoyed it with some queso blanco and butter!
I was inspired to make these after trying arepas from a little food cart in our local park, when my friend came to visit me from across the country! The arepas were so insanely good, I knew I had to give them a shot.
I used Goya yellow masarepa, and when I was making the dough, it looked pretty different from all the videos I saw. However, they still turned out pretty well! Not as good as the ones I got with my friend in the park, but still really quite good.
I'll also be taking some time to research and improve my arepas. I found a post on Reddit with a few details, and I definitely want to try some of the tips out! I think letting the dough sit for longer will make a huge difference.

1 year ago, on this day (well, a few days ago now), I started this blog to learn more about cooking and express my love of food into the void. In that time, I've tackled so many different dishes, from a wide array of cultures, to varying degrees of success.
And I've learned so much over the course of the year! From different cooking techniques, to the culture/history of different dishes, and even just learning how to taste. More than anything, I think this blog has taught me to look at food in ways I'd never thought of before, and it's truly shaped up as one of my biggest passions.
Quite honestly, I'm surprised I'm still going! I'd never imagined I would've care about this project enough for it to stick around. There were so many times that I thought I was going to give up, but here we are, one year later, alive and kickin'.
Here's to a great year of learning, and to many more! Happy 1-year anniversary!
