I've been experimenting with Quinoa. Quinoa Salad 1 cup uncooked Quinoa (Please cook as per package directions) 1 cup baby spinach 1 small carrot, julienned 1/2 cucumber, julienned 1 small apple cut into bite size pieces 1 stalk celery sliced Small handful cherry tomatoes 1/4 red onion finely sliced 2 mushrooms quartered then sliced Mix through and refrigerate until required then toss thoroughly with 1 cap full of Italian dressing (or dressing of your choice) Enjoy !!! Frost with chocolate frosting. Put a Nilla Wafer on for the snout. Cut a mini marshmallow in 1/2 and attach for the eyes. Open a Nutter Butter and position for the ears. Using a small piping bag or ziplock baggie with a small hole or tip, pipe a small dot on the mini marshmallow eye. Also, pipe the mouth and attach the m&m for the nose. DEVILED EGGS WITH CURRY and SHRIMP 12 Hard Boiled Eggs, peeled ½ c. Mayonnaise 1 tsp. mild or medium Curry Powder 2 tsp. Fresh Lime Juice Salt to taste 24 small Cooked Shrimp 2 tbsp. Chopped Chives 3 or 4 Lettuce Leafs Carefully slice the eggs lengthwise. Remove the yolk with a small spoon and put in a small mixing bowl. Mash the egg yolks with a fork. Stir in the mayonnaise, curry powder, lime juice and salt. Mix well and spoon into the egg halves. Top each with a shrimp and some chives. Line a serving dish with the lettuce and arrange the eggs on top. Hmmm....I am skeptic but I know my family will try it if I make it! ********************** MOM’S TOMATO SOUP CAKE 3 Eggs ¾ cup butter 1 ½ cup brown sugar 1 10 oz. can tomato soup 1 tsp baking soda 1/4 cup water 3 cups flour 3 tsp baking powder 1 ½ tsp cinnamon 1 tsp cloves 1 ½ tsp nutmeg 1 ½ cup raisins ½ cup walnuts or pecans Mix eggs, butter and brown sugar in bowl. In another bowl mix tomato soup, baking soda, and water. Mix dry ingredients in another bowl, and add to eggs, butter and sugar mixture about 1/3 rd at a time alternately with tomato soup mixture. Add raisins and nuts. Mix with a wooden spoon at this point. Grease a 13 inch X 9 inch glass cake dish. Bake at 350 degrees for 55 minutes to 1 hour (toothpick will come out dry when inserted in the center of the cake when it is done). Let cool then frost with Butter Icing. BUTTER ICING 1/3 c. Butter (or Margarine) 1/8 tsp. salt 5 c. Icing Sugar 6 tbsp. This will definitely be a favorite! ************************************** Minute Microwave Lasagna in a Mug (low Carb) Ingredients: 3 Tbsp pizza sauce 3 Tbsp cottage cheese or 2 Tbsp pesto 9i used cottage cheese) 1/3 cup fresh spinach or greens 4 slices pepperoni 1/4 cup shredded mozzarella cheese Layer in pizza sauce. Top with pesto or cottage cheese. Add spinach and pepperoni. Add cheese. Microwave on high for one minute. Let cool slightly. Serve. Makes 1 serving. Make extras ahead and refrigerate the rest for another day. ***Slow Cooker BBQ Ribs*** OH MY GOODNESS- YUM I made baked sweet potato fries and steamed mixed veggies with a light cheese sauce to go with them! ★SHARE this pic so it saves on your Timeline & you can find it later when you're ready to make it★ Serves 8 A fall-off-the-bone slow cooker rib recipe better than the ones you get at your favorite BBQ joint! Prep Time - 15 min Total Time - 8 hr Ingredients 4 pounds spare ribs - trim off excess fat 2 tbsp season salt 2 tsp Worcestershire sauce 1 tsp vinegar 18 oz low sugar BBQ sauce 2 tbsp brown sugar Instructions Cut ribs to fit in slow cooker Season ribs with season salt In a medium bowl mix remaining ingredients until combined Put first layer of ribs in slow cooker Pour 1/2 of BBQ mixture over ribs, repeat with remaining ribs and sauce Coat ribs as much as possible Cook on low for 6-7 hours, until meat is tender Remove from slow cooker and place on hot grill for 2-3 minutes per side until a little charred ENJOY!! SUCH a pretty cake! ****************** SUNSHINE CAKE 9 Egg Whites ½ tsp. Salt 1 tsp. Cream of Tartar In a large bowl, beat Egg Whites, Salt and Cream of Tartar 2 ½ minutes till stiff, not dry 1 ½ c. Sifted White Sugar and mix gently into Egg White mixture. 9 Egg Yolks, beat until thick and fluffy (1 ½ minutes) Add 1 tsp. Lemon Juice and 2 tsp. Vanilla to Egg White in large bowl. 1 ½ c. Sifted Cake Flour (1c. Flour & ½ c. Cornstarch. Add Flour gradually, folding it in. Bake in an Angel Food Cake Tin, at 325 Degrees for 1 hour (approx.) (You can also use an Angel Food Cake Mix instead of this original recipe) Icing for Sunshine Cake 1 tin (12-14 oz. size) Crushed Pineapple 1 Package of Instant Vanilla Pudding 2 cups Whipping Cream (I use 1- 500 ml. carton Whipping Cream) Stir Pineapple and Instant Vanilla Pudding together. Allow to stand for 5 minutes to thicken. Whip Whipping Cream until Stiff. Fold into the Pineapple Mixture. Cut cake into 3 Layers and use the Whipping Cream Mixture between each layer and on the Top and Sides.
