It’s Veganuary and I’d love nothing more than to help people to figure out how to eat more meatless meals. Here’s my simple “nourish bowls” meal plan for the coming week if anyone wants to follow along. Some of these meals can be made using canned/frozen/prepared foods for easier/faster meal prep.
