Today is a snow day in Nashville. I went to a friend's going away party at 10pm last night, and when the party was over there was already about 3inches on the ground. Granted, the snow we have is nothing like what some of my family and friends in other states experience, and they would probably laugh at a nashvillian snow day (run to the grocery store and buy out all the bread and milk, school closings before there's even a single snowflake in the sky, people cancelling any plans at the chance of a half inch...not to mention all the random snowboards and skiis that come to life once that little dusting hits as well as a last minute "official nashville snowball fight" for the whole city to get involved in). But today, I woke up and had to run errands. And in the mist of the cold I decided I would make my favorite type of chili, later I will make snow cream, and top the night off with some mexican hot chocolate. Sounds like the perfect snow day to me.
Prep: 10 minutes
Total: 70 minutes
2 jalapeño peppers, seeded and finely chopped
6 cups water or vegetable stock
1 28-oz can stewed tomatoes with their juice
1 15-oz can kidney beans, drained and rinsed
1 15-oz can black beans, drained and rinsed
1 15-oz can garbanzo beans, drained and rinsed
¼ t. salt, plus more to taste
1. In a medium to large stockpot over medium heat, heat the olive oil. Add the onion, green pepper, red pepper, celery and jalapeños and sauté until the onions are fragrant and translucent, about 6 minutes.
2. Add the water or stock and bring to a boil. Turn down the heat to low and add the remaining ingredients, stirring until combined. Simmer for about 45-50 minutes. Salt to taste and serve hot.
1 teaspoon real vanilla extract
1. Combine in a saucepan: Half and half, egg yolks, sugar, and pure vanilla extract. Use the whisk to thoroughly combine these ingredients and to beat the egg yolks a bit.
2. Place the pan on medium heat. Warm while stirring gently with the whisk. Do not bring this mixture all the way to a boil, just heat until it begins to simmer. At this point, the half and half, egg yolks, sugar, and vanilla should be thoroughly incorporated.
3. Remove from heat. Pour the mixture into a bowl and put it into the refrigerator or freezer until it is cold...Meanwhile: Go outside and gather your snow...Preferably new, fresh, fluffy snow. Get two big bowls full.
4.While stirring, slowly pour the half and half mixture into the bowl full of snow. Add extra snow as needed to get desired ice cream consistency.
Mexican Hot Chocolate
Ingredients:
3 tablespoons instant hot chocolate mix
1 tablespoon chocolate syrup
1/2 teaspoon ground cinnamon
1. In a large mug, mix the hot chocolate mix, chocolate syrup, cinnamon, and chili powder. Pour in the milk. Add the boiling water and stir.
