I was talking about something similar with my friend the other day and I think it could apply here. Immortal and mortal ships have the same kind of rules, in my opinion. The last one is where they differ.
When they meet is the biggest rule here. If the older person meets the younger person whilst they are still a minor, and actually gets to know them then, it's really.... Iffy. I'm not talking Rapunzel and Eugene, they met literally a day before her birthday. Doesn't count. I'm talking Jacob and Reneesme, or any of the wolf imprints. (Smh at Stephanie Meyer)
Maturity of them both. Here is where Hiccup and Viggo shine, and to prove my point even more, Hiccup and Jack Frost. Let's start with Rtte. Hiccup has shown multiple times that he can challenge Viggo on an intellectual level and Viggo seems to be the only one who can do that to Hiccup in turn. While Hiccup is 18 when they meet, Hiccup becomes a far more mature person by the end of the show. Partially because of Viggo. It isn't inherently romantic, I just choose to see it that way. Now Jack is the complete opposite. Though he is over 300 years old, he still acts like a teenager most of the time. Hiccup would make him grow, whilst he would get Hiccup to liven up.
With Mortal's and Immortal's, the third rule is the story surrounding them. Like Lucifer and Chloe. Lucifer is eons old, yet the ship works because you see how they love each other and ignore the age gap (she's also thirty and has a kid, so that helps). But story is important anyway. With mortal age gaps, I do think there is a cap on how far you can go. Like 20, 25 years I think is fine with the criteria above. I have a personal limit of maybe thirty, but that still depends on story.
In short, I'll ship anything if you give me a good story for it.
