Olive Bread
2 cups flour (any kind will do, and so will mixing flours) 1 tsp baking soda 1/2 tsp salt 1 tbsp olive 1 cup chopped onion (yellow and sweet onions will work better than red) 1 cup milk (any kind) 2 tbsp butter 2 eggs 1/4-3/4 cup olives (any kind, kalamata give the bread a rich flavor) 1 tbsp oregano
1. Preheat oven to 350 degrees. 2. In a bowl, mix dry ingredients together. 3. Chop olives and onions. Add wet ingredients into dry and mix well. 4. Grease pan and empty mixture into pan. Fill pan 1/2-3/4 of the way full, may require a second pan. 5. Cook bread for around 45 minutes, checking the bread with a toothpick often. 6. Let bread cool for ten minutes or so. Scrape sides of pan and tilt the pan upside down to get the bread out.
Note: Make sure to search for pits and pit fragments before mixing the olives into the bread.
