The easiest way to instantly beautify a cake is to add an assortment of wildflowers, plucked straight from the garden.
Whenever I’m stuck in a baking rut and getting reacquainted with it again, I turn to making cheesecake. I have this Philadelphia branded vintage book that I dug up in a Value Village, and the New York style cheesecake recipe is always my go-to. It provides a solid base to work with, and is so easy to jazz up with lemon, strawberry, or any other sort of flavours.
These past few weeks have been very tough to handle. As unexpected and heart wrenching as it was, I had to put down my cat, Puchatka, (that’s Polish for Fluffy), after 16 beautiful and long years. I still haven’t come to terms with it, and think of her often. To help with the loss, I turned to baking again as a means of therapy and self care. It certainly helped last summer when I was between jobs and living at home, and I am certain it is helping me feel better now, too.
I opted for a simple recipe to get back into the groove of baking again - a classic lemon tart, with meringue cookies as decorative toppers. The beauty of this recipe is that I now have a jar of leftover lemon curd in my fridge - so delicious, that you can just eat it with a spoon!
