These apple banana muffins are a healthy and tasty treat that are approved by the 21 Day Fix. They're made with good things for you and are great for breakfast or a snack.
Ingredients: 1 cup rolled oats. 2 ripe bananas, mashed. 1/2 cup unsweetened applesauce. 2 eggs. 1/4 cup honey. 1 tsp vanilla extract. 1 tsp cinnamon. 1/2 tsp baking soda. 1/2 tsp baking powder. 1/4 tsp salt. 1/2 cup diced apples. 1/4 cup chopped walnuts optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners or grease it. In a blender or food processor, pulse the rolled oats until they turn into oat flour. In a mixing bowl, combine the mashed bananas, unsweetened applesauce, eggs, honey, vanilla extract, and mix well. Add the oat flour, cinnamon, baking soda, baking powder, and salt to the wet mixture and stir until everything is well combined. Fold in the diced apples and chopped walnuts if using. Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
