This may be a controversial take, but when people say that Gwyn can't be with Az because she's a sexual assault survivor and he's kinky, I think they need to remember that there are already ships that contain that element. Most prominently, Zadeleine and Mollyage from the Cat and Mouse duet. Addie and Molly both spent months being gang raped and were able to later reclaim their agency and sexual intimacy with Zade and Cage, respectively, via various kinks. And they're into far more extreme kinks than Gwyn being tied up with a ribbon.

Now, I am not saying that Gwynriel is like Zadeleine and Mollyage. I am well aware of the problematic elements of both couples (it is dark romance, after all). I'm just merely saying that women being sexually tortured and then finding intimacy again via BDSM and kink has already been done in a very popular series. Plus, there's many readers in the dark romance community who are very open about using BDSM to reclaim their agency after sexual trauma. There's nothing wrong with Gwyn joining those ranks, too.
