Bus breakfast isn’t always pretty- but it’s definitely nutrient dense 🙈 - this week has been mackerel and egg and I am sorry for all the people sharing the bus with me 😅😅 on the other hand- i go to work so early that I’m usually almost alone 😉 • • • Boiled baby sweet potatoes with sautéed spinach (thanks @oddboxldn ) with a boiled egg and tinned mackerel. Except the spinach everything else was prepared before so it’s just a 5 Minute assembly question in the mornings. For AIP replace the egg with 🥑. As it has been getting colder all I’ve been wanting is porridge- with seeds and nut butters and jams and fruits and cinnamon and all the good things I keep seeing on instagram! • • • So this week I tried it- with soaked and rinsed oats, soaked nuts and seeds, hemp milk (which some say is quite low in phytates) and I loved it while I ate it. But I have to admit- I’m not sure my belly liked it 😔 • • • I don’t think oats are for me- despite what we are always told I do think they cause quite a bit of blood sugar spiking (and I didn’t even add sugar except in the form of fruit and jam to mine!) • • • But I want porridge when it’s cold!!!!! Starting on week 2 of NO Coffee and Week three of my AIP protocol for my thyroid, arthritis, endometriosis and whatever else may be going on with my body. So proud of myself for making it this far and really getting creative with my food, esp my breakfast 😉🙌. ****************************************** 👉🏻Today's AIP scramble is a mixture of grilled squash, baked apple, two slices of bacon and roasted sweet potatoes :).
