Mastering Acids: The Ultimate Guide to Culinary Seasoning | America's Test Kitchen
Long time Dan, I've slowly accepted adding vinegar to my cooking since your segment on it. Thanks for the clarification on the lemon pith: Use it to make natural pectin, or add it into smoothies, or brew it into tea.
my wife and I watch a lot of americas test kitchen and it is genuinely refreshing how much they just refuse to engage in diet culture. the point is the food tastes good!! and you can make it at home and it works every time!!
Bridget and Julia from America’s Test Kitchen have been a form of body positivity and empowerment and beauty throughout my formative years and they inspire me every time we watch them
Follow the instructions on the instructions on the box for each flavor, but use half the water suggested. If the box asks for 2 cups of water, use only 1.
Place the hot jell-o mixture into 3 molds and place into the fridge (I used loaf pans).
About 4 hours later, the jell-o will have solidified. Use a butter knife or spatula to "score" the jello. Cut cubes into all of it.
Dump all the jell-o cubes into a larger container (I used a fairly wide Tupperware container). Carefully mix them, so they are evenly assorted. Set in the fridge.
In a medium sized mixing bowl, add ½ cup of cold water. Evenly sprinkle the gelatin over the surface of the water. Set aside to "bloom" for 5 to 10 minutes.
While the gelatin bloom, bring your cream and remaining ½ cup water up to a boil. Whisk in your sugar equivalent and salt. Make sure it is dissolved.
Pour your hot cream mixture into the gelatin and whisk. Whisk until the gelatin is completely dissolved.
Allow the gelatin to sit out until it is cooled down (about room temperature). You can start this process in the fridge, but it can start to solidify around the edges. It's a safer approach to just let it sit on the counter and cool for about 30 minutes. The idea is to pour it over the chilled cubes, without the warm mixture melting the cubes, causing them to bleed. If it's too cool, the creamed gelatin will solidify.
When the creamed gelatin is cool, pour it over the assorted jell-o cubes. Chill for about 4 more hours.

or wait to get your hands on your year-end bonus, I've never seen this movie specifically, but I love Chevy Chase from his role in Community (2009-2015). The entire cast was amazing, but Chevy I've never seen anything funnier in my life, this guy is class act, it's too bad he got cancelled for whatever went down. But this scene where he announces his plans to have a pool I can relate with, as someone who lived in the tropics it was all we ever dreamed about: An abundance of water to swim in & cool off. But when my dad got us access to a private pool club—where we were the only ones there, it was a bit deflating—so I'm not sure what the fun is in exclusivity. As a kid, you sort of want to be around other kids, to go play water polo or tag with. I dunno, my dad realized this and made sure we attended parties with kids galore... no wait, first time we went we played with a few kids, but it ended with my brother nearly drowning one of the boys (rough housing after realizing the kid was cheating at Marco Polo & targeting only my brother). After that the next time we went my dad made sure it was just us—well what can i say, without the other kids to drown, it was no longer any fun. Am i right? j/k you just can't take us anywhere.
I dunno, there must be something wrong with me, when I have done something once semi-successfully, I want to go defcon1 Turducken!!!!! But deep fry turkey is on the list too :D Cooking Outdoors! Sounds so fun, oh hospital trips..talk about #death knell :-o we should have Lan over for leftover turkey congee & turkey hot sandwiches, it is the best thing ever.. my best memory I have for leftovers anything—for the world's biggest carcass it's time to make something soup based, my mom was inspired. But then again, we're not traditionalists, we rarely eat turkey, so my enthusiasm is also informed by how we focus on what works as a matter of convenience.
I guess there is no real western equivalent to congee other than risotto or possibly a cross between porridge & kedgeree or stew?
Kedgeree is a classic Anglo-Indian dish of spiced rice, flaked smoked fish (traditionally smoked haddock), and hard-boiled eggs. Originating from the Indian dish khichdi (a simple medley of rice and lentils), it was adapted by the British during the colonial era and became a popular, sophisticated breakfast or brunch dish in Victorian Britain.

I dunno what happened, haven't received a single notification from this channel this entire year.. oh well, great time to finally get one of Toine—I would make this with a tonne of veggies, think it would be great way to hide something to make it a balanced homemade snack. . nice add to freshen up most of the leftover turkey.

P.S. Lan I love your spreadsheet tip & colour coding, my understanding is I'm like that ship which blocked world trade for days on end :D No need to assign me anything new I'm an evergreen or is it evergiven (er I'm confused), the way I swing from one extreme to the next makes it clear there is no way you could ever trust my output quality.
The Evergreen Marine company name is painted in large letters on the side of the ship because it is the operator, while the ship's actual name, Ever Given, is displayed in smaller lettering on the bow and stern. Evergreen Marine is a large Taiwanese shipping company that operates many ships, and they use the "Ever" prefix for their ship names, such as Ever Goods, Ever Glory, and Ever Gentle.
Cheers on all the wine pairing tips from both camps, very helpful
