Bagels -- Basics with Babish (feat. Dan Souza) [source]
This week on Basics, we're tackling one of the home-cook holy-grails: really chewy, really crisp, really good bagels, somehow existing outside NYC. Or Montreal.
+ Ingredients & Shopping List 1 cup plus 2 tablespoons ice water (9 ounces) 2 tablespoons malt syrup 2 ⅔ cups (14 2/3 ounces) bread flour 4 teaspoons vital wheat gluten 2 teaspoons instant or rapid-rise yeast 2 teaspoons salt ¼ cup (1 1/4 ounces) cornmeal ¼ cup (1 3/4 ounces) sugar 1 tablespoon baking soda

[2:51] Whatever you do..listen to these two 0:D haha or wait to get your hands on your year-end bonus, I've never seen this movie specifically, but I love Chevy Chase from his role in Community (2009-2015). The entire cast was amazing, but Chevy I've never seen anything funnier in my life, this guy is class act, it's too bad he got cancelled for whatever went down. But this scene where he announces his plans to have a pool I can relate with, as someone who lived in the tropics it was all we ever dreamed about: An abundance of water to swim in & cool off. But when my dad got us access to a private pool club—where we were the only ones there, it was a bit deflating—so I'm not sure what the fun is in exclusivity. As a kid, you sort of want to be around other kids, to go play water polo or tag with. I dunno, my dad realized this and made sure we attended parties with kids galore... no wait, first time we went we played with a few kids, but it ended with my brother nearly drowning one of the boys (rough housing after realizing the kid was cheating at Marco Polo & targeting only my brother). After that the next time we went my dad made sure it was just us—well what can i say, without the other kids to drown, it was no longer any fun. Am i right? j/k you just can't take us anywhere.
I dunno, there must be something wrong with me, when I have done something once semi-successfully, I want to go defcon1 Turducken!!!!! But deep fry turkey is on the list too :D Cooking Outdoors! Sounds so fun, oh hospital trips..talk about #death knell :-o we should have Lan over for leftover turkey congee & turkey hot sandwiches, it is the best thing ever.. my best memory I have for leftovers anything—for the world's biggest carcass it's time to make something soup based, my mom was inspired. But then again, we're not traditionalists, we rarely eat turkey, so my enthusiasm is also informed by how we focus on what works as a matter of convenience.
