Bagara Rice via Instant Pot
INGREDIENTS
Basmati Rice – 2.5 cups Green Chilli – 1/2 Pepper corns – 1 tsp Cinnamon – 1 inch Cloves – 2 to 3 Bayleaf – 2 Cumin Seeds – 1 tsp Oil – 2 tbsp Coriander Leaves/Cilantro – 2 tbsp Salt – 2 tsp Ginger Paste - 1 tbsp Garlic Paste – 1 tbsp Sliced Onions – 1/2 medium size Garam Masala – 1 tsp INSTRUCTIONS 1. Wash and soak 2.5 cups of rice for an hour 2. PREP: Cut up 1/2 onion, half green chili and cilantro. Put whole spices into a small bowl: 1 tsp pepper corn, 1 inch cinnamon, 2-3 cloves, 2 bayleaves, 1 tsp cumin seeds, & 2 tsp salt. 3. Press “Saute” on the Instant Pot and wait for it to say “Hot” 4. Add 2 tbsp oil and add whole spices. Fry for a minute. 5. Add 1/2 onions and fry until golden brown 6. Add 1tbsp of garlic paste and 1tbsp of ginger paste. Saute until raw smell is gone. 7. Add 1/2 green chilli and 1 tsp garam masala. 8. Drain water from rice and saute on top of masalas for a minute 9. Scrape bottom to avoid burn notification 10. For every 1 cup rice = 1 and 1/4 cup water. So for our 2.5 cups of rice, add 3 cups water. Mix well. 11. Add cilantro. 12. Close Instant Pot and set valve to Sealing Mode 13.
