The long week's coming to a wind up, so got into lazy cooking for lunch today.. Baingan Masala(Lazy version)😋 Quick prep is the key. INGREDIENTS: 🍆Brinjal - 3-4 nos(medium size) 🧄Garlic - 4 to 5 cloves Turmeric pwd - 1 tsp 🌶Red chilli pwd - 2 tsp Salt - 1 tsp Tamarind (pulp/water)- 1 tbsp Sesame oil - 1 tbsp METHOD: •Chop up the brinjal into dices. •Crush the garlic, add to hot oil •Add the turmeric,red chilli pwd, salt. •Saute until brinjal becomes soft. Add 1/2cup water. •Add tamarind pulp, and cook until mushy. Check salt. •Finish with sesame oil and take from fire. 💟Goes well with any curry and rice! We had some Jeera Rice, Daal and baingan😍 ..
