Ingredients: 1 cup mashed ripe bananas about 2-3 bananas. 1/2 cup unsweetened applesauce. 1/4 cup honey or maple syrup. 1/4 cup Greek yogurt. 1 egg. 1 teaspoon vanilla extract. 1 1/2 cups whole wheat flour. 1/2 teaspoon baking soda. 1 1/2 teaspoons baking powder. 1/2 teaspoon salt. 1/2 cup mini chocolate chips or dark chocolate chunks. Cooking spray for greasing muffin tin.
Instructions: Preheat your oven to 350F 175C. In a large bowl, combine mashed bananas, applesauce, honey or maple syrup, Greek yogurt, egg, and vanilla extract. In another bowl, whisk together the whole wheat flour, baking soda, baking powder, and salt. Add the dry ingredients to the wet ingredients and stir until just combined. Gently fold in the mini chocolate chips. Spray a muffin tin with cooking spray or use muffin liners. Spoon the muffin batter evenly into the muffin cups. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious and skinny banana chocolate chip muffins!
