Million Dollar Chicken Adapted from the Standard Grill recipe on @foodnetwork 4-5 lb. whole chicken 1 lemon, quartered 3 cloves garlic, crushed 5 sprigs thyme 1 bay leaf Salt & pepper, to taste Approx. 1/2 c olive oil, divided 3 slices rye bread, cut in half 1 c crème fraîche 1 lemon, zest & juice 1 shallot, minced 1 tsp Aleppo chili 1. Stuff chicken with lemon, garlic, thyme, and bay leaf. Season outside and inside of chicken with salt and pepper. Optional: cover and refrigerate overnight. 2. Drizzle olive oil in a roasting pan. Lay bread slices over oil, and place chicken on top of the bread. Bake 1hr at 425°, periodically drizzling additional oil to baste. 3. In a bowl, mix crème fraîche, lemon zest & juice, minced shallot, and Aleppo chili. Brush over chicken. 4. Bake chicken an additional 20min at 475°, re-applying glaze every 5min. Glaze will bubble and caramelize.
