Doggie Meatballs Recipe from my mom, who has been spoiling dogs for decades. 1lb ground turkey (or meat of your choice) 1 apple 1/2 c shredded cheddar 5 strips cooked bacon 1 egg Cooking spray 1. Peel & grate the apple into a bowl with the ground turkey. 2. Add the cheese, bacon, and egg. Mix with your hands. 3. Roll into balls and place on a baking sheet greased with cooking spray. 4. Bake at 350° 20-25min. Million Dollar Chicken Adapted from the Standard Grill recipe on @foodnetwork 4-5 lb. whole chicken 1 lemon, quartered 3 cloves garlic, crushed 5 sprigs thyme 1 bay leaf Salt & pepper, to taste Approx. 1/2 c olive oil, divided 3 slices rye bread, cut in half 1 c crème fraîche 1 lemon, zest & juice 1 shallot, minced 1 tsp Aleppo chili 1. Stuff chicken with lemon, garlic, thyme, and bay leaf. Season outside and inside of chicken with salt and pepper. Optional: cover and refrigerate overnight. 2. Drizzle olive oil in a roasting pan. Lay bread slices over oil, and place chicken on top of the bread. Bake 1hr at 425°, periodically drizzling additional oil to baste. 3. In a bowl, mix crème fraîche, lemon zest & juice, minced shallot, and Aleppo chili. Brush over chicken. 4. Bake chicken an additional 20min at 475°, re-applying glaze every 5min. Glaze will bubble and caramelize. Pork Chops w/ Mustard Cream Sauce 4 boneless center-cut pork chops 1 c flour, for dredging 2 eggs 1/2 c milk 1 c seasoned panko bread crumbs 1/4 c butter 2 c chicken broth 3/4 c heavy cream 1/3 c Dijon mustard 2 Tbsp whole grain mustard 2 c arugula 1/4 c lemon juice 1/4 c olive oil Pinch of salt and pepper 1. Bread the pork chops: dredge in flour, dip in whisked eggs and milk, roll in panko bread crumbs. 2. Sear both sides of pork chops in a pan with butter, approx. 3 minutes per side on medium heat. Move to baking sheet and bake 25 minutes at 350°. 3. Deglaze pan with chicken broth. Whisk in heavy cream and both types of mustard. Cook on medium heat until bubbly, then reduce to a simmer until you are ready to serve. 4. In a bowl, stir together lemon juice, olive oil, and a pinch of salt and pepper. Pour over arugula. 5. Layer pork chop, mustard cream sauce, and arugula salad in a dish. Spinach & Artichoke Dinner Casserole 1 16oz. package elbow noodles 1 lb. chicken breast, cubed 1/2 c butter, divided 1 10 oz. package frozen spinach, thawed 1 14 oz. can artichoke hearts, chopped 2 tsp minced garlic 1 8 oz. brick cream cheese, cubed 1 c sour cream 2 tsp cayenne pepper 1 1/2 c shredded mozzarella, divided 1 tomato, sliced 1/4 c grated Parmesan cheese Cooking spray 1. Pre-heat oven to 375° and cook pasta to package instructions. 2. Cook chicken over medium heat with 1/4 c butter, 5-7 min until cooked through. 3. Add spinach, artichoke hearts, garlic, 1/4 c butter, cream cheese, sour cream, cayenne pepper, and 1 c mozzarella. Stir until cheeses are fully melted and combined. 4. Grease a casserole dish with cooking spray and fill with cooked pasta. Pour chicken mixture over pasta and stir to combine. 5. Top with remaining 1/2 c mozzarella, tomato slices, and Parmesan cheese. Taco Salad *Serves 4 1 lb ground turkey 1 (1.25 oz) taco seasoning packet 2/3 c water 2 bags chopped romaine lettuce Topping suggestions: Black beans Diced red onion Roasted corn Diced tomatoes Shredded cheddar Diced avocado Fresh-squeezed lime Sour cream Avocado ranch (recipe in previous post) Tortilla chips (recipe in previous post) 1. Bacon & Egg Potato Salad Slightly modified from @chefirvine for @foodnetwork Magazine 2 lb. red-skinned potatoes 2 large eggs 3/4 c mayo 2 Tbsp red wine vinegar 1 medium red onion, diced 3 scallions, chopped 3 Tbsp whole grain mustard 1 Tbsp sugar Salt & pepper, to taste 8 strips bacon, cooked and crumbled 1. Boil potatoes 15-20 min until fork tender. Let cool, then slice into quarters. 2. Soft-boil 2 large eggs: cover with cold water in a pot, bring to a boil, remove from heat, cover for 6 minutes, then peel. 3. Smash eggs into a thick paste, using a fork. 4. Mix mayo, vinegar, onion, scallions, mustard, sugar, salt & pepper. 5. Fold together potatoes, eggs, sauce mixture, and bacon. Cheesy Garlic Bread 1 baguette 1/2 c (1 stick) salted butter, softened 1 Tbsp olive oil 3 tsp (3 cloves) minced garlic 1 Tbsp Italian seasoning 1 c shredded mozzarella 1. Slice baguette lengthwise. 2. In a small bowl, mix butter, oil, and garlic. Spread on both baguette halves then sprinkle with Italian seasoning. 4. Add shredded mozzarella on top. 5. Bake in a 425° oven 7-10 minutes or until cheese begins to crisp and bubble. 6. Irish Dubliner Linguine with Sausage & Broccolini *Note: Kerrygold brand butter and cheese are my personal preference for this recipe. For a thinner sauce you will need to add cream in step 4 but you will lose some of the "bite" in the flavor. 1 16oz. package linguine 5 Tbsp. butter, divided 1 c diced yellow onion 2 cloves garlic, minced 1 lb. sweet Italian sausage, casings removed 8 oz. broccolini, chopped, thick stems removed 10 oz. brick Irish Dubliner cheese, coarsely grated 1. Cook linguine to package directions, minus 2 minutes for extra al dente pasta. Drain, then add 2 Tbsp. butter. 2. In a large saucepan over medium-low heat, melt 3 Tbsp. butter and sauté onion, garlic, and sausage until browned. 3. Add broccolini and cook 5-7 minutes until slightly tender. 4. Stir in shredded cheese until fully melted. Eggs with Baked Parmesan Tomatoes *Note: recipe is for 1 serving, multiply out for a larger group 1 Roma tomato 1 Tbsp grated Parmesan cheese 2 tsp seasoned panko bread crumbs Drizzle of olive oil Thin pad of butter 2 large eggs Salt and pepper to taste 1.
