A tasty and comforting pasta dish made with gluten-free pasta, a bright homemade basil pesto sauce, and soft boiled potatoes. Great for a quick and filling meal.
Ingredients: 300g gluten-free pasta. 2 large potatoes, peeled and diced. 1 cup basil leaves. 1/4 cup pine nuts. 2 cloves garlic. 1/4 cup grated Parmesan cheese. 1/4 cup extra virgin olive oil. Salt and pepper, to taste.
Instructions: Boil the diced potatoes until tender, then drain and set aside. Cook the gluten-free pasta according to package instructions until al dente. In a food processor, combine basil leaves, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped. With the food processor running, slowly add the olive oil until the mixture forms a smooth pesto sauce. Season with salt and pepper to taste. In a large mixing bowl, toss the cooked pasta with the pesto sauce and boiled potatoes until well combined. Serve hot, garnished with extra basil leaves and a sprinkle of vegan Parmesan cheese if desired.
