This Mexican Pasta Salad with Creamy Chipotle Lime Dressing is a delightful fusion of Mexican and pasta salad flavors. It's loaded with black beans, corn, cherry tomatoes, and a creamy chipotle lime dressing that adds a zesty kick. Perfect for picnics, potlucks, or as a refreshing side dish.
Ingredients: 8 oz about 2 cups penne pasta. 1 cup black beans, cooked and drained. 1 cup corn kernels, fresh or frozen. 1 cup cherry tomatoes, halved. 1/2 cup red bell pepper, diced. 1/2 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup green onions, thinly sliced. 1/4 cup cotija cheese, crumbled optional. 1/4 cup roasted pepitas pumpkin seeds. 1 lime, zest and juice. 2 tablespoons olive oil. 2 tablespoons mayonnaise. 2 teaspoons chipotle pepper in adobo sauce, minced. 1 teaspoon honey. Salt and pepper to taste.
Instructions: Cook the penne pasta according to package instructions until al dente. Drain and rinse with cold water to cool it down. In a large mixing bowl, combine the cooked pasta, black beans, corn, cherry tomatoes, red bell pepper, red onion, cilantro, and green onions. In a separate small bowl, whisk together lime zest, lime juice, olive oil, mayonnaise, minced chipotle pepper, honey, salt, and pepper to make the creamy chipotle lime dressing. Pour the creamy chipotle lime dressing over the pasta salad and toss to coat all the ingredients evenly. Garnish the salad with crumbled cotija cheese and roasted pepitas. Chill the Mexican Pasta Salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together. Serve the salad cold and enjoy!

Ingredients: 1 cup bulgur. 2 cups diced watermelon. 1/2 cup fresh mint leaves, chopped. 1/4 cup red onion, finely chopped. 1/4 cup crumbled feta cheese. 2 tablespoons olive oil. 2 tablespoons fresh lemon juice. Salt and pepper to taste.
Instructions: Cook the bulgur according to package instructions, then let it cool. In a large bowl, combine the cooked bulgur, diced watermelon, chopped mint leaves, and finely chopped red onion. In a small bowl, whisk together olive oil and lemon juice. Season with salt and pepper to taste. Drizzle the dressing over the salad and gently toss to combine.
