Ingredients: 2 lbs beef chuck, cut into cubes. 1 onion, chopped. 2 cloves garlic, minced. 8 oz mushrooms, sliced. 2 cups beef broth. 1 cup red wine. 2 tbsp tomato paste. 1 tbsp Worcestershire sauce. 1 tsp dried thyme. 1 tsp dried rosemary. Salt and pepper to taste. 2 tbsp all-purpose flour. 2 tbsp butter. Fresh parsley, chopped for garnish.
Instructions: In a slow cooker, combine beef, onion, garlic, mushrooms, beef broth, red wine, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until beef is tender. About 30 minutes before serving, melt butter in a small saucepan over medium heat. Stir in flour and cook until lightly browned, about 1 minute. Whisk in 1 cup of the cooking liquid from the slow cooker, stirring constantly until smooth and thickened. Pour the thickened sauce back into the slow cooker and stir to combine. Cook for an additional 30 minutes on low. Serve hot, garnished with fresh parsley. Enjoy!
