Kim sevmez ki brownie yi? Brownie yi ben ortaokul-lisedeyken teyzem yapardi bol cikolata soslu. Bugune kadar da zaten hic brownie yapmamistim nasilsa nereye gidersem gideyim her restaurantta menude olan mis gibi bir tatliydi benim icin. Taa ki Ingiltere'ye yerlesene kadar. Brownie'nin boyle cafelerde kasa onunde son dakika satilmasi amaclanan, cikolata vari jelatin icinde satildigini gorup kahvemin yanina alma gafletinde bulunana kadar. Aman yarabbim saniyorum en az 10 gun oncesinde icinde onlarca koruyucu maddeyle pisirilmis bir brownie... Yine de onca koruyucu sayesinde olacak yenilesi kivamdaydi... Cafe Nero'da ise bir parca brownie siparis ettim ki yasadigim en buyuk pismanlikti... Boylesi kotu bir brownie hic yememistim. Neyse tum bu deneyimler beni kendi brownie tarifimi denemeye itti. Simdiye kadar yazdiklarimdan fark etmis olacaksiniz ben kakao yerine cikolatanin ta kendisini kullanmayi daha cok seviyorum. Bu brownie tarifimde de o yuzden kakao yok ancak en guzelinden bir paket cikolata var. Dunya kadar brownie tarifi var internette, kitaplarda... Benim tarifim kendi damak tadima gore olani kisacasi ne kek sert gibi ne de suflemsi cok yumusak, tam tamina ortasi :) Eger sizlerde boyle tercih ediyorsaniz bence bir tarifimi deneyin derim :) (NOT: Ayrica yapilabilecek en kolay ve en lezzetli tatli tarifi olsa gerek; pisman olmayacaksiniz deneyin ve yorumlarinizi benimle paylasin lutfen.)
Malzemeler:
130 gr. tuzsuz tereyagi
200 gr. cikolata (%60 kakao oraninda)
225 gr. toz seker
3 yumurta
1 vanilya cubugu
100 gr. kirilmis findik
100 gr. beyaz un
Yapilisi:
Cikolatayi elinizle kirin ve cam bir kaseye alin.
Icerisine kup kup dogradiginiz tereyagini ekleyin.
Cam kaseyi icerisinde bir miktar kaynar su bulunan orta atesteki tencerenin uzerine kasenin alti suya degmeyecek sekilde yerlestirin.
Cikolata ve tereyagini ara ara karistirarak su buharinda yaklasik 10-15 dakika kadar eritin. (Bu isleme benmari deniyor).
Erittiginiz cikolata ve tereyagi karisimini 5 dakika kadar ilinmasi icin bir kenara alin.
Icerisine sekeri ilave edip 5 dakika cirpin.
Daha sonra yumurtalari teker teker ilave edin. Her bir yumurta ekleyisinizde 3 dakika kadar iyice cirpin.
Vanilya cubugundan vanilya cekirdeklerini de ekleyip 2 dakika kadar daha cirpin.
Kirilmis findik parcalarini da ekleyip 2 dakika kadar cirpin.
Son olarak elediginiz unu ilave edip cok fazla karistirip karisimi sondurmemeye dikkat ederek 2 dakika kadar cirpin.
Karisimi 23x23 cm lik yagli kagit serdiginiz borcama dokun.
Onceden isittiginiz 160 derece (fan) firinda 30-35 dakika pisirin.
Oda sicakligina gelince kesip dilerseniz cikolata sosla, dondurmayla ya da sade servis edin. Deneyenlere simdiden afiyet bal olsun :) Sevgiler!
HAZELNUT BROWNIES:
Who doesn't love brownies? Let me ask this way: who doesn't love freshly baked home-made brownies? And who doesn't love to bake the best ever brownies quickly with a very easy recipe? Well if you are one of those chaps keep reading because you're on the right place. I have always loved brownies and never thought to bake it myself as in Turkey I could have found this delicious dessert in every restaurant. Until I came to England... I start to find brownies that are sold just front shelf of the cashier as a take away bar with full of additives... And I'm afraid they all tasted crap. So I have tried to figure out my own recipe. You must have realised I love using the chocolate itself instead of cocoa and my brownie recipe has chocolate bar as an ingredient. My recipe makes the brownies the way I like: not so chewy and fudge-y in the middle but also not like cake; something in between crunchy outside and chocolate-y in the middle. Ingredients:
130 gr. unsalted butter
200 gr. cooking chocolate (%60 cocoa)
225 gr. caster sugar
3 medium eggs
1 vanilla stick
100 gr. crushed hazelnuts
100 gr. plain white flour
To-Bake:
Crush the chocolate with your hands and put pieces in a bowl.
Add diced butter pieces into bowl.
Put the bowl above a pot which contains hot water boiling on medium heat. Place the bowl carefully so that the base does not touch to water.
Stir the chocolate and butter from time to time and melt with the evaporated water for about 10-15 min. (This process is called bain marie).
Set the melted chocolate and butter mix aside to cool down for 5 mins.
Once it has cooled down add the sugar and mix for 5 mins.
Then add the eggs one at a time and mix for 3 mins after each egg.
Remove the vanilla beans from stick and add; mix for 2 mins.
Add crushed hazelnuts and mix for 2 more mins.
Finally add the flour (sieved) and mix carefully for 2 mins. Make sure you dont over mix the mixture.
Pour the mixture to 23x23 cm tray that you put baking paper.
Pre-heat your oven to 160 degrees centigrade (fan).
Bake your brownies for 30-35 mins.
Once cool down to room temperature slice the brownies and serve warm either plain or with chocolate sauce/ice cream.
