Tonight’s menu - Black Bean Penne
So I cooked the black bean penne for about 8 minutes (I like my pasta al dente). I wasn’t sure how this would effect this type of pasta because I’ve never had it before but it wasn’t too bad but I will say that I could have let it cook a bit little longer.
In a side pan I put Avocado oil, minced garlic, a sliced and diced tomato and a handful of fresh spinach. Cooked that up while the water was boiling and let it simmer til the pasta was done.
This was a delicious dish. The texture of the pasta was a bit strange but it tasted like normal pasta and the little side of tomatoes and such really dressed it up so it wouldn’t be too boring. I would definitely make this dish again.
Side note: My only concern with this dish was that I didn’t use a stainless steel skillet. We don’t have one at the house but I will invest in one ASAP!
