April Is Evolving

A journey of mind, body and soul. I’m a late-thirties mother of one (and done) who’s lifestyle habits in the past have hurt more than benefited so I am taking charge of my choices and making the changes I need to live healthier, happier and stronger for my son and I.

A bit messy but omg so worth it. I’ve never had a pomegranate before so this was quite the adventure. A bit messy to get the seeds out but once you do, it’s so delicious to snack on the seeds. But I’m not really into the fiberous middle of the seed. lol that’s the only downside.

Tried a red dragon fruit tonight. It was actually damn amazing. I’m going to save the other half for my smoothie tomorrow morning. ❤️

Making some delicious minestrone soup!

Mirepoix - Onions, garlic, celery and carrots

Chopped sweet potato, zucchini, kale, spinach

2 cans diced tomatoes

1 can tomato paste

1 can small white beans

1 can corn

2 cups water

1 cup small shells

4 cups vegetable broth

1 tablespoon of lemon juice

This is your meditation: mindfulness, naturalness in whatever you do.’

This mornings breakfast smoothie. Fresh Kale, fresh spinach, fresh avocado half, one fresh banana, one fresh beet, frozen mango, unsweetened coconut milk, hemp protein powder and peanut butter powder. I’m leaving out the matcha powder while I’m trying to heal my leg. But it’s getting better, not quite there yet but improvement is being made. 💚🙌🏻✨💛🙏🏻💫 have a blessed day.

Goals For The Last Months Of 2019✨⚔️💪🏻

1. Cleanup diet: Sugar, processed foods, on wheat products, all dairy products, meat, etc.

2. Vegetarian/vegan/plant-based whole food diet

3. Mindful eating

4. Physical exercise: Walking, swimming, yoga

5. Overcoming addiction’s, Hard addictions, soft addictions

This mornings smoothie. Despite some setbacks, I’m still trying to keep up with this new way of eating. I moved the wrong way yesterday and bam I sprained my calf pretty bad.

This time I used ice, frozen mango chunks, spinach, coconut milk, beet, avocado, hemp protein powder, matcha powder and peanut butter powder.

The only thing in this photo that I didn’t include in the smoothie was the mangos. I had enough blueberry. 💜🙏🏻🙌🏻✨

Tonight’s menu - Black Bean Penne

So I cooked the black bean penne for about 8 minutes (I like my pasta al dente). I wasn’t sure how this would effect this type of pasta because I’ve never had it before but it wasn’t too bad but I will say that I could have let it cook a bit little longer.

In a side pan I put Avocado oil, minced garlic, a sliced and diced tomato and a handful of fresh spinach. Cooked that up while the water was boiling and let it simmer til the pasta was done.

This was a delicious dish. The texture of the pasta was a bit strange but it tasted like normal pasta and the little side of tomatoes and such really dressed it up so it wouldn’t be too boring. I would definitely make this dish again.

Side note: My only concern with this dish was that I didn’t use a stainless steel skillet. We don’t have one at the house but I will invest in one ASAP!

I want to start logging my cleaner eating journey. So here’s to this journey that I’ve been working hard on keeping up. It hasn’t been easy and I know I have a ways to go. But compared to how I used to eat, drink and think about life, I’ve come so far. I will get into my old ways another time.

For now, enjoy this picture of my first smoothie bowl that I made this morning. I will admit that drinking a smoothie is a bit easier than spooning the smoothie. 😂 I think I will continue to drink my smoothies from now on, but hey, I wanted to try something new.

All of the ingredients are fresh from my local supermarket. The avocado makes a ton of difference in the thickness of the smoothie. If you were to exclude the avocado it would just be a loose liquid texture great for drinking. Either way you consume this, you can be sure that you are getting everything you need for your diet and you will feel great to boot! Enjoy!

Ingredients:

• half an avocado

• one small beet

• one banana

• handful of spinach

• 1 cup of frozen blueberries

• 1 cup coconut milk

• 1/2 tsp matcha powder (I am caffeine sensitive so I don’t go too overboard with this one)

• 1 tbsp Protein powder (Bob’s Redmill brand)

• 1 tbsp peanutbutter with flax (Teddie brand)

• small handful of honey & oat granola (Bob’s Redmill brand)
