Happy #nationalfrenchtoastday I used to make French toast for every holiday and birthday growing up. Being #glutenfree has hindered that quite a bit. I also wanted to try a #vegan recipe to hoard my eggs for my much loved frittatas and scrambles. And, to find new ways to explore this #nationalveganmonth and I found a grand one at the Minimalist baker's site and her Vegan Banana French Toast! Because I have some yummy #leftovers I shmeared it with some steamed #sweetpotato mashed.
