Vegan Asparagus Salad
Mung Bean “Egg” Patties

1 cup mung beans (soaked overnight)
1 cup unsweetened non-dairy milk 2 tbsp nutritional yeast 1 tbsp canola oil 1 tsp black salt 1 tsp baking powder 1 tsp tapioca starch 1/2 tsp turmeric 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp black pepper
Place mung beans in a large bowl. Cover with water. Soak overnight.
Drain soaked beans. Place in high-speed blender along with; non-dairy milk, nutritional yeast, canola oil, black salt, baking powder, tapioca starch, turmeric, garlic powder, onion powder, and black pepper. Blend until smooth.
Heat a frying pan with a touch of cooking oil. Pour 1/4 cup batter for each “egg” into pan. Fry for several minutes, flipping when top begins to form bubbles. Repeat until batter is all used up. (Makes 10 vegan eggs.)
Serve immediately or store in fridge for a few days or freeze and reheat later.
