A tasty and easy-to-make baked chicken dish with broccoli and potatoes that is glazed with a honey garlic sauce that is both sweet and savory.
Ingredients: 4 boneless, skinless chicken breasts. 2 cups broccoli florets. 4 medium potatoes, cubed. 1/4 cup honey. 3 cloves garlic, minced. 2 tablespoons soy sauce. 1 tablespoon olive oil. Salt and pepper, to taste. Fresh parsley, chopped for garnish.
Instructions: Preheat oven to 375F 190C. In a small bowl, mix together honey, minced garlic, soy sauce, olive oil, salt, and pepper. Place chicken breasts in a baking dish and pour the honey garlic sauce over them, making sure to coat each piece evenly. Arrange broccoli florets and cubed potatoes around the chicken in the baking dish. Cover the dish with foil and bake for 25 minutes. Remove foil, baste chicken with sauce from the bottom of the dish, and bake uncovered for an additional 20 minutes or until chicken is cooked through and potatoes are tender. Garnish with chopped parsley before serving.
