Chicken Piccata with Capers This is a quick and easy recipe for chicken piccata is an Italian classic with a sauce of capers, garlic, lemon juice, and white wine.
Garden Herb Caper Butter Sauce
This Garden Herb Caper Butter Sauce is delightfully fragrant and is a sheer delight generously drizzled onto fish.
Ingredients (makes about 1 cup):
80 grams/2.85 ounces unsalted butter
a small bunch Garden Chervil
a small bunch Garden Chives
1/4 cup capers
a pinch of salt and freshly cracked black pepper
1/2 small lemon
In a small saucepan, melt butter over a low flame.
Finely chop Garden Chervil and Chives.
Once the butter is just foaming, stir in about three-quarters of the chopped herbs. Cook, 1 minute.
Thoroughly drain capers, and stir into the saucepan. Cook, a couple of minutes more.
Season with salt and black pepper.
Just as the butter turns noisette (very slightly browning), squeeze in the juice of the lemon halve.
Remove from the heat, and immediately stir in reserved chopped Chervil and Chives.
Serve Garden Herb Caper Butter Sauce generously drizzled onto white fish, like Halibut. It is particularly good onto ray.
