Years before when I was in Kashmir, one of my friends there who was in J&K Police took me to his home in Budgam. Kashmiris are very hospitable people, so he walked me around and showed me the plethora of stuff growing in his field including some carrot flowers blooming. I was very fascinated to see the actual plant as I had seen only the root vegetables before. It is a vegetable which has made its way to Kerala only in the recent past even in a classic like Avial. Somedays before when I paid a visit to a Gourmet Supermarket , I could see some baby carrots with their tops from Ooty. Only to utilise the greens , I got some home. I feel carrot tops are quite delicious in itself probably quite under utilised. One of the best ways to use it is to make a pesto. I made a pesto Chutney with half a roasted yellow bell pepper, carrot greens, 2 pods of garlic, some parmesan & Romano cheese , cashew nuts, half a lemon juice & salt. It was super delicious with a very dill like flavor.
