Ingredients: 4 large carrots, peeled and sliced into thin strips. 2 tablespoons olive oil. Salt and black pepper to taste. 8 slices of your favorite bread. 4 ounces sharp cheddar cheese, grated. 2 tablespoons butter, softened.
Instructions: Turn on the oven and heat it up to 400F 200C. Put the carrot strips on a baking sheet and season them with salt and pepper. For 20 to 25 minutes, or until the carrots are soft and slightly caramelized, roast them in an oven that has already been heated. When it's done, take it out of the oven and set it aside. Set a pan or griddle over medium heat. Each piece of bread should have butter on one side. Add a piece of bread to the pan or griddle, butter side down. Put grated cheddar cheese on the bread slice, and then put roasted carrot strips on top of that. Put another piece of bread on top, but this time butter side up. The bottom piece of bread should be golden brown and the cheese should start to melt. Then flip the sandwich over and cook until the other side is golden brown and the cheese is fully melted. Do it again with the rest of the bread and filling to make more sandwiches. Take it off the griddle or skillet, cut it up if you want, and serve it hot.
