This Caesar salad is different because it has grilled romaine lettuce and a creamy cashew dressing on top of it. The smoky flavors and rich, dairy-free dressing go so well together.
Ingredients: 2 hearts of romaine lettuce, halved. 2 tablespoons olive oil. Salt and black pepper to taste. 1 cup cashews, soaked for 2 hours and drained. 1/4 cup water. 2 cloves garlic, minced. 2 tablespoons lemon juice. 2 tablespoons nutritional yeast. 1 teaspoon Dijon mustard. 1 teaspoon Worcestershire sauce. 2 anchovy fillets optional. Croutons for garnish. Grated Parmesan cheese for garnish optional.
Instructions: Warm up the grill over medium-high heat. Add salt and black pepper to the romaine lettuce hearts that have been cut in half. Then brush them with olive oil. Grill the lettuce halves for two to three minutes on each side, or until they get grill marks and start to wilt a bit. Take the lettuce off the grill and set it aside. Put the soaked cashews, water, lemon juice, nutritional yeast, Dijon mustard, Worcestershire sauce, and anchovy fillets if using in a blender. Mix until it's creamy and smooth. Place the grilled lettuce halves on plates to serve. Spread the cashew dressing over the grilled lettuce. If you want, you can add croutons and grated Parmesan cheese on top.
