I made some cassava flour flatbread to use as a gluten free burger buns today and it turned out great. Here's my recipe:

3 cups cassava flour
1 tbsp baking powder
1/2 tsp salt
1 tsp zatoun (fantastic spice mix from Palestine, you can buy it online too)
1/4 cup lactose free butter
1 and 1/4 cup lactose free milk
1 tablespoon olive oil
Instructions: Mix dry, mix dry with wet, and then keep adding water until the consistency is right to form balls that stick together well. Roll the balls in more cassava flour on a surface just to coat the surface of them, oil pan, heat pan, flatten ball in the pan (or before transferring to the pan on wax paper), flip when the bottom gets a lil toasty looking like my picture (or more toasty if you want extra crisp I guess?)
