I made some cassava flour flatbread to use as a gluten free burger buns today and it turned out great. Here's my recipe:
My recipe:
3 cups cassava flour
1 tbsp baking powder
1/2 tsp salt
1 tsp zatoun (fantastic spice mix from Palestine, you can buy it online too)
1/4 cup lactose free butter
1 and 1/4 cup lactose free milk
1 tablespoon olive oil
Instructions: Mix dry, mix dry with wet, make ball shape, roll in more cassava flour on a surface, oil pan, heat pan, flatten ball in the pan, flip when the bottom gets a lil toasty looking like my picture (or more toasty if you want extra crisp I guess?)
