Coconut Cauliflower Bites
These Spicy Cauliflower Bites 🌶 that I made in collaboration with @ottos_cassava_flour are SO good and I hope you guys make them! It's honestly so easy and they are pretty healthy too 😊 Ingredients: •1 cup of @ottos_cassava_flour . •1 whole cauliflower •1/2 cup of water •1/2 cup of non-dairy milk •1 teaspoon of paprika •2 teaspoons of garlic powder •2 teaspoons of onion powder •Salt & black pepper to taste •Hot sauce of your choice to taste Method: 1. Preheat the oven to 450 Fahrenheit. 2. Chop the cauliflower into bite-sized florets. 3. In a mixing bowl, add all of the dry ingredients. 4. Next add the wet ingredients and whisk together. If the batter is too dry, add more liquid until you get a creamy consistency, like pancake batter. 5. Prepare a tray with parchment paper. 6. Little by little, put the chunks of cauliflower into the batter, coat them completely, then transfer them to the parchment paper. 7. Repeat until all of the cauliflower and batter is used up. 8. Put this in the oven for 20 minutes. 9. Remove from the oven, put the cauliflower bites into a bowl, and toss with hot sauce of your choice. 10. Once they are coated, put them back on the parchment paper, and into the oven for an additional 20 minutes. 11. Enjoy! Serve with ranch, tahini, or a sauce of your choice. 🌱
Lemon Pepper Cauliflower Bites
Ingredients: For the cauliflower bites: • 1/2 of a cauliflower • 1 teaspoon of olive oil • The juice from 1 lemon • 1 teaspoon of dried parsley • 1/4 teaspoon of garlic powder • 1/4 teaspoon of salt • 1/4 teaspoon of black pepper
For the tahini lemon sauce: • 1 tablespoon of tahini • 1 tablespoon of lemon juice • 1 teaspoon of lemon pepper • 1/4 teaspoon of salt • A pinch of black pepper • 1 teaspoon of dried parsley • A pinch of red chili peppers (optional)
Method: 1. Preheat the oven to 420 degrees Fahrenheit. 2. Chop the cauliflower into bite-sized florets. 3. In a bowl, mix together the olive oil, the lemon juice, the dried parsley, salt, and pepper. 4. Line a tray with parchment paper, or grease a tray. 5. Place the cauliflower florets in the bowl with the lemon juice marinade. 6. Mix the florets around and make sure that they are completely covered. 7. Transfer them to the tray. 8. Bake for 10 minutes. 9. After 10 minutes, take them out and toss them in the marinade again. 10. Place them back on the tray and bake for another 5 minutes. 11. Serve with tahini lemon sauce.
To make the tahini lemon sauce: 1. In a small bowl, mix all of the ingredients for the sauce together. 2. Depending on how thick the tahini is, you might need to add a couple more squirts of lemon juice or water until your desired consistency is reached.
