Clearly you do not live in an earthquake zone if you're considering open shelves (says a Californian who felt the earthquake 2 nights ago).
LOL! I grew up in California, though it’s true I live in a less earthquakey place now. But what I learned about furniture and earthquakes is a) brace bookshelves to the wall and b) if it’s strong enough to send a plate off a shelf, no cabinet door will stop it, and doors flying open in an earthquake are a legitimate concern, especially at head-height :D
Besides, I have corelware and plastic. Anything that does break is cheaply replaced. :D

I am mildly jealous of you, sir. My wife picked out at least one unique color for every room in our house. And a different one for the lone hallway.

Be careful on the ladders. I have it on good authority that falling off of those can be bad. (Source: the two feet I broke in the summer of 2016)
Yikes! D: I will do my best. the ladder is not very tall -- I’m maybe 4′ off the ground at most -- and it has proven to be much more stable than anticipated, but I’m mostly concerned about it flattening out from under me and then me landing on some sharp piece of it. My plan of action is, if I feel it starting to go, to jump backwards and trust in luck :D

When you do get around to doing your kitchen, Chicago has two makerspaces with woodshops: Pumping Station One and Make-Chicago. Depending on how transport-friendly they are, you could avoid doing any woodworking inside your apartment.
I’ve considered Pumping Station! But most of the tool use I’m going to do either needs to be onsite or will require stuff that’s too large to move easily on public transit.
