These baked mini omelettes with cheese and onions are a tasty and simple way to start the day. They taste savory and cheesy, with a touch of sweetness from the onions, and are great for busy mornings or brunch parties. They're also great for serving guests because each one comes in its own portion.
Ingredients: 6 large eggs. 1/4 cup milk. 1/2 cup grated cheddar cheese. 1/2 cup diced onions. Salt and pepper to taste. Cooking spray or butter for greasing.
Instructions: Start by heating the oven to 350F 175C. Whisk the eggs and milk together in a bowl until they are well mixed. Grate the cheddar cheese and cut up the onions and add them to the egg mixture. If you want, you can add salt and pepper to taste. For muffins, use cooking spray or butter to grease the tin. Fill up each muffin tin compartment about two thirds of the way to the top with the egg mixture. Put the omelettes in an oven that has already been heated for about 20 to 25 minutes, or until they are set and have a little golden on top. Take them out of the oven and let them cool down for a while. Cut the mini omelettes out of the muffin tin with a knife. Enjoy while hot!

Gluten-free cheese and onion pasties that taste great and have a flaky pastry crust and a savory filling. It's great for a quick lunch or snack.
Ingredients: 2 cups gluten-free all-purpose flour. 1/2 cup cold unsalted butter, cubed. 1/2 cup cold water. 1/2 teaspoon salt. 1 large onion, finely chopped. 1 1/2 cups shredded gluten-free cheddar cheese. 1/4 teaspoon black pepper. 1/4 teaspoon dried thyme. 1 egg, beaten for egg wash.
Instructions: Put the gluten-free flour and salt in a bowl and mix them together. Mix in the cold butter cubes until the mixture looks like big crumbs. Add one tablespoon of cold water at a time and mix the dough until it comes together. Roll it into a ball, cover it with plastic wrap, and put it in the fridge for 30 minutes. Stir-fry the chopped onion in a pan until it turns clear and a little sweet while the dough chills. Leave to cool. Turn on your oven and heat it up to 375F 190C. To make the dough about 1/8 inch thick, roll it out on a lightly floured surface while it is still cold. Make 6 squares or rectangles out of it. Put a scoop of the browned onions, some shreds of cheddar cheese, a pinch of black pepper, and some dried thyme in the middle of each square of pastry. To make a triangle or rectangle, fold the dough over the filling. Use a fork to press the edges together to seal. Brush the pasties with the egg wash to make them golden. Put the pasties on a baking sheet that has been lined with parchment paper. Bake for 20 to 25 minutes, or until they are crispy and golden brown. Let them cool down a bit before you serve them. Have fun with your gluten-free onion and cheese pasties!

I'm not a #crisp lover but don't mind the odd #packet of #CheeseAndOnion when having a #PintOfLager at the #LocalPub. I was charged 80p for this, is that too expensive or about right these days? http://t.co/LxoF8jKzRA https://www.instagram.com/p/Cic_OUsIpyz/?igshid=NGJjMDIxMWI=
