Ingredients: 1 pound ground beef. 1/2 onion, finely chopped. 1 clove garlic, minced. 1 teaspoon salt. 1/2 teaspoon black pepper. 4 large flour tortillas. 1 1/2 cups shredded cheddar cheese. 1/2 cup diced tomatoes. 1/4 cup sliced pickles. 1/4 cup ketchup. 1/4 cup mustard. 1/4 cup mayonnaise. 1 tablespoon vegetable oil.
Instructions: In a skillet, cook the ground beef over medium-high heat until browned and no longer pink. Drain excess fat. Add the chopped onion and minced garlic to the skillet with the cooked beef. Cook for 2-3 minutes until the onion is softened. Season the beef mixture with salt and black pepper. Mix well and remove from heat. Lay out one flour tortilla and sprinkle a quarter of the shredded cheddar cheese evenly over one half of the tortilla. Spread a quarter of the cooked beef mixture over the cheese, then add diced tomatoes and sliced pickles on top. Fold the other half of the tortilla over the filling to create a half-moon shape. Repeat the process with the remaining tortillas and filling. Heat a large skillet or griddle over medium heat and add a little vegetable oil to coat the surface. Carefully place one of the filled quesadillas onto the hot skillet and cook for 2-3 minutes on each side until golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more oil to the skillet if needed. In a small bowl, mix together ketchup, mustard, and mayonnaise to make a special sauce for dipping.
