Easy Cheesy Potato Burritos - Quick Meal Idea
Combine the flavors of a classic cheeseburger with the convenience of a quesadilla in this mouthwatering recipe. Perfect for a quick and satisfying meal!
Ingredients: 1 pound ground beef. 1/2 onion, finely chopped. 1 clove garlic, minced. 1 teaspoon salt. 1/2 teaspoon black pepper. 4 large flour tortillas. 1 1/2 cups shredded cheddar cheese. 1/2 cup diced tomatoes. 1/4 cup sliced pickles. 1/4 cup ketchup. 1/4 cup mustard. 1/4 cup mayonnaise. 1 tablespoon vegetable oil.
Instructions: In a skillet, cook the ground beef over medium-high heat until browned and no longer pink. Drain excess fat. Add the chopped onion and minced garlic to the skillet with the cooked beef. Cook for 2-3 minutes until the onion is softened. Season the beef mixture with salt and black pepper. Mix well and remove from heat. Lay out one flour tortilla and sprinkle a quarter of the shredded cheddar cheese evenly over one half of the tortilla. Spread a quarter of the cooked beef mixture over the cheese, then add diced tomatoes and sliced pickles on top. Fold the other half of the tortilla over the filling to create a half-moon shape. Repeat the process with the remaining tortillas and filling. Heat a large skillet or griddle over medium heat and add a little vegetable oil to coat the surface. Carefully place one of the filled quesadillas onto the hot skillet and cook for 2-3 minutes on each side until golden brown and the cheese is melted. Repeat with the remaining quesadillas, adding more oil to the skillet if needed. In a small bowl, mix together ketchup, mustard, and mayonnaise to make a special sauce for dipping. This Light Ranch BLT Chicken Salad Sandwich is a tasty and lighter take on the classic BLT sandwich. It has tender shredded chicken, ranch dressing, crispy bacon, and fresh vegetables. Great for a quick and filling meal!
Ingredients: 2 cups cooked shredded chicken breast. 1/4 cup plain Greek yogurt. 2 tablespoons light mayonnaise. 2 tablespoons ranch seasoning mix. 1/4 cup diced celery. 1/4 cup diced red onion. 1/4 cup diced tomatoes. 4 slices whole wheat bread. 4 leaves lettuce. 4 slices cooked bacon. Salt and pepper to taste.
Instructions: Shred the chicken and mix it with the Greek yogurt, mayonnaise, and ranch seasoning mix in a bowl until everything is well mixed. Dice the tomatoes, red onion, and celery and add them to the chicken. Add pepper and salt to taste. Combine everything well by stirring. Toast the slices of whole wheat bread just a little. On each of the two pieces of toast, put a lettuce leaf. Spread an equal amount of the chicken salad mixture on top of each of the two sandwiches. Add two pieces of cooked bacon to the top of each sandwich. Add the last few slices of toasted bread to the top of each sandwich. Cut each sandwich in half across the middle, then serve.
