Slow roasting cherry tomatoes intensifies their flavor, making them perfect for this simple yet delicious pasta dish. The sweetness of the tomatoes pairs beautifully with the garlic-infused olive oil, creating a rich and satisfying sauce that coats each strand of pasta.
Ingredients: 500g cherry tomatoes, halved. 4 cloves garlic, minced. 2 tbsp olive oil. Salt and black pepper to taste. 300g pasta of your choice. Fresh basil leaves, for garnish. Grated Parmesan cheese, for serving.
Instructions: Set the oven to 275F 135C before you start. Place the cherry tomatoes halves in a baking dish and add the minced garlic, olive oil, salt, and black pepper. Toss the tomatoes until they are well covered. Spread the tomatoes out evenly in the baking dish. Roast them in a hot oven for two to three hours, or until they are soft and caramelized. In the meantime, cook the pasta until it's al dente according to the directions on the package. Remove the water and set it aside. Take the tomatoes out of the oven and let them cool down a bit after they are done roasting. Toss the cooked pasta with the roasted tomatoes until everything is well mixed. Hot slow-roasted tomato pasta should be served with fresh basil leaves and grated Parmesan cheese on top.
