These adorable Sprinkles Birthday Cake Marshmallows are great for celebrating special events or bringing a whimsical touch to your regular treats. They have all the flavor and excitement of rainbow sprinkles packed into a soft, fluffy package.
Ingredients: 3/4 cup water. 3 tablespoons unflavored gelatin. 2 cups granulated sugar. 1/2 cup corn syrup. 1/4 teaspoon salt. 1 teaspoon vanilla extract. 1/2 cup rainbow sprinkles. Powdered sugar for dusting.
Instructions: In a small bowl, combine the gelatin and 1/2 cup of water. Let it sit for 10 minutes to bloom. In a saucepan, combine the remaining 1/4 cup of water, granulated sugar, corn syrup, and salt. Heat over medium heat, stirring until the sugar is dissolved. Once dissolved, stop stirring and let it come to a boil. Use a candy thermometer and cook until it reaches 240F 115C. Remove the syrup from the heat and slowly pour it into the bloomed gelatin, stirring continuously. Using an electric mixer, beat the mixture on high speed for about 10-12 minutes until it becomes fluffy, white, and triples in volume. Add vanilla extract and continue to beat for another 2 minutes. Fold in the rainbow sprinkles until evenly distributed. Grease a square baking pan and dust it with powdered sugar to prevent sticking. Pour the marshmallow mixture into the prepared pan, spreading it evenly with a spatula. Sprinkle more rainbow sprinkles on top of the marshmallow mixture while it's still soft. Let the marshmallows set at room temperature for at least 4 hours or overnight. Once set, use a knife dusted with powdered sugar to cut the marshmallows into squares. Dust the cut marshmallows with more powdered sugar to prevent sticking. Serve and enjoy your birthday cake marshmallows with sprinkles!
