Ingredients: 1.5 lbs sirloin steak, cut into 1-inch cubes. 1 red bell pepper, cut into chunks. 1 red onion, cut into wedges. 1/4 cup olive oil. 2 tablespoons red wine vinegar. 3 cloves garlic, minced. 1 teaspoon dried oregano. Salt and pepper to taste. Wooden or metal skewers.
Instructions: In a bowl, combine olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper. This is your marinade. Place the steak cubes in a resealable plastic bag or a shallow dish and pour half of the marinade over them. Toss to coat the steak evenly. Marinate for at least 30 minutes, or preferably overnight in the refrigerator. If using wooden skewers, soak them in water for 30 minutes to prevent burning during cooking. Preheat the grill to medium-high heat. Thread marinated steak cubes, red bell pepper chunks, and red onion wedges onto skewers, alternating for a colorful presentation. Grill the kebabs for about 10-12 minutes, turning occasionally, or until the steak reaches your desired level of doneness and the vegetables are tender and slightly charred. While the kebabs are grilling, mix the remaining marinade with additional fresh herbs to create a chimichurri sauce. Once the kebabs are done, serve them hot with a drizzle of chimichurri sauce on top. Enjoy your flavorful and juicy steak kebabs with chimichurri!
