Chimichurri, Egg, Lettuce, and Sausage breakfast Wrap
Buchweizotto mit pulled Austernpilzen under gratiniertem Ziegenkäse
Inspiriert von Annelie habe ich Austernpilze heute mal auf eine neue Art zubereitet.
Ich habe die Austernpilze tatsächlich in Stücke “gerissen” und dann im awoke langsam von allen Seiten goldbraun angebraten (sieht auf wie Dönerfleisch ;).
Chimicurri einfach aus Knoblauch, Petersilie, roten und grünen Chillischoten, einigen Ringen Frühlingszwiebeln, Salz, Pfeffer und natürlich Olivenöl im Blender zu einer Pesto-artigen Konsistenz zusammen mixen.
Für den Buchweizotto Buchweizen abspülen, Zwiebel kleinschneiden und in Öl anbraten, etwas Knoblauch dazu, dann die Buchweizenkörner kurz mit anrösten.
Dann wie bei Risotto schluckweise Gemüsebrühe und Weißwein angießen, bis er gar ist, aber noch Biss hat.
Ziegenfrischkäse mit ein paar Tropfen Olivenöl, Pfeffer, Thymian und Honig toppen und kurz unter den Grill.
Zum servieren dann Buchweizen auf den Teller, die Pilze drumherum platzieren, das Chimicurri darüber träufeln und je eine Scheibe des gratinierten Ziegenkäse auf dem Risotto setzen.
Neu, ungewöhnlich und sehr köstlich.

Steak with chimichurri sauce: serves two, plus extra for steak/chimi sandwiches.
Ingredients:
2 steaks (skirt, new york strip, etc.)
1/2 cup flat-leaf parsley
1/4 cup cilantro
1 tablespoon red wine vinegar
4 cloves garlic
1 teaspoon dried red pepper flakes
1/4 cup extra virgin olive oil
1 tablespoon water
salt, black pepper
This sauce is very fresh and very versatile, will instantly make a sandwich, fish, chicken, or steak dish awesome. Just combine the chimichurri ingredients into a food processor (I have a Magic Bullet at home, and no, that's not a sex gadget). If you don't have a food processor just chop your herbs by hand and combine in a bowl. Taste the sauce and adjust seasoning, herbs, etc. as needed.
Heat up a grill pan or regular heavy pan on a medium-high heat, add some oil to it. Season your steak with salt as the pan heats. Throw on your steaks and cook evenly on each side, turning only once, until medium rare (when the steak has some springiness when you press it with your fingers), take off heat and rest.
Slice steak, put chimichurri sauce on top, serve with something potato-y. Eat.
