Indulge in a delicious gluten-free pound cake infused with the rich flavors of peanut butter and chocolate chips, topped with a decadent peanut butter glaze. Perfect for satisfying your sweet tooth while accommodating a gluten-free diet.
Ingredients: 2 cups gluten-free all-purpose flour. 1 cup creamy peanut butter. 1 cup granulated sugar. 1/2 cup brown sugar. 1/2 cup unsalted butter, softened. 1/2 cup sour cream. 4 large eggs. 1 teaspoon vanilla extract. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1 cup gluten-free chocolate chips. 1/2 cup milk or dairy-free alternative. 1/4 cup powdered sugar for glaze. 2 tablespoons creamy peanut butter for glaze.
Instructions: Start by heating the oven to 350F 175C. Butter and flour a bundt cake pan. Melt the butter and mix it with the brown sugar and white sugar in a bowl until the mixture is light and fluffy. Mix the peanut butter, sour cream, eggs, and vanilla extract into the cake mix. Make sure the ingredients are well mixed. Mix the gluten-free flour, baking powder, baking soda, and salt together in a different bowl. Mix the dry ingredients into the wet mixture slowly, adding them in between the milk. Keep doing this until the batter is smooth. Add the gluten-free chocolate chips and mix them in. When the bundt pan is ready, pour the batter into it and smooth the top. In a hot oven, bake for 45 to 55 minutes, or until a toothpick stuck in the middle comes out clean. The cake should cool in the pan for 10 minutes. After that, take it out and let it cool completely on a wire rack. To make the glaze, mix the powdered sugar and peanut butter in a small bowl. Spread the glaze over the cake that has been cooled. Chocolate Chip Peanut Butter Pound Cake with Peanut Butter Glaze is gluten-free. Cut it up, serve it, and enjoy it!
