Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 cups granulated sugar. 1 1/2 teaspoons baking powder. 1/4 teaspoon salt. 1/4 cup unsalted butter, softened. 2 large eggs. 1 tablespoon cocoa powder. 1 teaspoon vanilla extract. 1 cup buttermilk. 1 tablespoon blue food coloring. 1/2 teaspoon white vinegar. 1/2 teaspoon baking soda. For Vanilla Buttercream:. 1 cup unsalted butter, softened. 4 cups powdered sugar. 1/4 cup milk. 2 teaspoons vanilla extract. Blue food coloring optional.
Instructions: Preheat your oven to 350F 175C. Line a cupcake tin with paper liners. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, beat together the softened butter and eggs until creamy. Mix the cocoa powder and vanilla extract into the butter mixture. Gradually add the dry ingredients mixture, alternating with buttermilk, starting and ending with the dry ingredients. In a small bowl, combine the blue food coloring, vinegar, and baking soda. Add this mixture to the batter and mix until well combined. The batter should have a rich blue color. Divide the batter evenly among the cupcake liners, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. For the Vanilla Buttercream: In a mixing bowl, beat the softened butter until smooth and creamy. Gradually add the powdered sugar, milk, and vanilla extract. Beat until the frosting is fluffy and well combined. If desired, add a few drops of blue food coloring to achieve a light blue frosting color. Once the cupcakes are completely cooled, frost them with the Vanilla Buttercream using a piping bag or spatula. Decorate the cupcakes as desired and enjoy!
